An Olympic Saturday!

My Olympic Saturday started off with me on the couch with my dogs, my coffee and watching the Olympics……it’s hard to pull yourself away once you start watching! For breakfast, while watching more Olympics, I copied a little treat I found here. She always has the best food combinations! Her name is Julie too! Co-winkydink? Maybe. Who cares. Weigh In Day!

Well, through the wedding food and drink, followed by a week of carbs, followed by a week of hard work and getting back in the game, I managed to stay in the 160’s! Yay! Now, getting back to 165, then moving forward! At the scale……169.6. Breakfast during my meeting…Luna Bar and coffee from home.5 PPV Lunch…Chicken Salad Wrap, carrots, bananas and strawberries topped with yogurt. (geezzzzz, I was kinda hungry)9 PPV I love my Chicken Salad! Had an afternoon party with these guys after two hours of bill paying and balancing an unbalanced, but now balanced checkbook! Girls Night Out! No Drinking!

It really wasn’t that big of a deal. I had a great time getting together with some High School friends I hadn’t seen in a really long time. The hostess had an amazing spread of food with super healthy and low point options, and the conversation and laughs and memories were great! Lots of fruit, a couple of different salads, shrimp, cheese and crackers ( I skipped those), chips and gauc (didn’t even tempt myself with one)…….And I bellied up to the bar by the fruit!! …..and I took a veggie and hummus tray and Cookie Butter for every one!! I took this for my beverage, but also drank lots of water, while the girls enjoyed their wine and beer, those lushes…. Meatballs For Breakfast!

Yip….more Chicken Meatballs. Now I have had them chopped up in a salad, on a meatball sandwich, and now, chopped up and added to my scrambled egg whites! This was possibly my FAVORITE! I love my Kraft 2% Sharp Cheddar Slices. They melt really well and have a great, strong cheese flavor. So I scrambled the egg whites, added two chopped up meatballs, then I broke the cheese slice into several pieces and put it on top. Then I set a lid on top of it to melt it a little, and topped with a bit of salsa. I added two slices of toast spread with Laughing Cow (Strawberries and Cream) Wedges. Pizza and Ice Cream for Breakfast! Guilt Free!

It all started with my morning smoothie after walking club. (On the way home from walking club, I ran a mile.) The thought started as a smoothie with some frozen bananas in it. Then I remembered I had seen a lot lately on Ice Cream made out of frozen bananas. The most recent website I read about Banana Ice Cream was here. It’s just frozen fruit…….blended. First I added 1 1/2 frozen banana’s, in chunks, then 4 large strawberries, then a little Truvia, then some Coconut Milk, which I bought a while back, not knowing what I would use it for. My Strawberry Banana Ice Cream was perfect and cold and fresh! It was the perfect treat after meeting with my Walking Club! Yes, dogs are Welcome, and we do have one four legged member! Apple Sandwiches

This is a great way to get your “Apple A Day” in with a little fun! Slice your apple so you have four good slices. Core the apple and fill a Tablespoon with your favorite Spread! Peanut Butter, Almond Butter, Laughing Cow Cheese Wedges, or this ridiculously delicious new Trader Joe’s find, Cookie Butter! You can also add raisins, any other dried fruit, granola, nuts or drizzle honey on top! I think they’re super cute! Why would a kid say NO to this?? YOU determine the points by YOUR toppings! Crockpot Overnight Oatmeal!

4 PPV I made this over the weekend and REALLY liked it! I put it in the crockpot Friday night so I would have an awesome hearty breakfast to start my weekend off! One morning I topped it off with a sliced banana and some Better n Peanut Butter. Or you could top it off with Dark Chocolate chips! Or how about Cookie Butter and sliced strawberries?? Online Bootcamp

My 8-Week Bootcamp will end this week. I am so glad my neighborhood girls asked me to join! I get really bad about remembering different exercises to do, and I get bored. So having someone tell me exactly what to do, and changing things up a bit, was exactly what I needed. It was also nice to have workout buddies! Ironically, pictures of me were posted on the Bootcamp 360 Facebook page this week! Not my most flattering look! I think this move is called the Lumber Jack? You swing the weight up over your head as you stand up, then swing it down as you squat. It’s a bitch! I don’t remember the name of this one, but I learned how to stick my butt way out! Lots of variety today!

Not a real exciting blog, but lots of variety and some weird choices. This butter spray is great for just a little taste of butter, and something to make your dry toast, not so dry. Just a few sprays does the trick. It is also great on Popcorn!
