Pumpkin Pancakes

Ingredients
  1. 1/4 C Dry Quaker Oats , Quick 1- minute Oats
  2. 1/4 C Canned Pumpkin
  3. 3 Egg Whites
  4. 1/4 tsp Cinnamon
  5. 1/4 tsp Pumpkin Pie Spice
  6. 5 Drops of SweetLeaf Vanilla OR 1 Packet of Sweetener of your choice
  7. 1 T. Pumpkin Butter
Instructions
  1. Heat a skillet over medium high heat.
  2. Combine all ingredients, except for the Pumpkin Butter, in a small bowl and mix well with a fork. Lightly spray your skillet with cooking spray.
  3. Pour batter onto skillet, making three pancakes.
  4. Spread out the thick batter with the back of a spoon into desired shape and thickness.
  5. Cook for about 3 minutes, then flip and continue to cook for about 2 minutes.
  6. Top with Pumpkin Butter

  1. This recipe makes one serving.

This was a little different than the Pumpkin Pancakes that I have made using more oatmeal, and greek yogurt. They were less points, and more dense. But I do like both!

The “icing on the cake”, (pardon the pun) is the Pumpkin Butter on the top! You really need a good Pumpkin Butter to make these complete!

  2. Made your pumpkin pancakes Saturday morning. Absolutely loved them – And will definitely be putting those on my “standard-stand-bys” recipes list! And of course, me being me, I chopped up a fresh date and put in there! I felt like I was having dessert for breakers, but they kept me full until lunch. Sunday morning I had your scrambled egg on toast with mashed avocado. I can’t get over how much I love that combo – I know I’ve told you that before, but every time I eat it I am wondering the whole time, “what else am I missing out on in this life, that I’ve never tried before?” LOL!   4. Hope you like the dates – let me know! I eat them almost daily and always replace them for raisins in any form. Just make sure you buy the fresh ones, and the “Medjools” – they sell them in the produce department. (The Medjools are the biggest and sweetest) – If you get dried dates, they would count as points – just like grapes/raisins!   5. Oh my gosh….too funny! I was laughing so hard reading this because I do have time in the morning, but I’m always waiting until the last minute to eat before I leave the house, and them I’m rushing!

    I love the apples and I’m so glad you do too! After you make the pancakes, you will realize that they really don’t take too long, but I’m anxious to hear how you like them! Everything taste great on top of them!

  6. Plan B: your warm cinnamon apples with walnuts on instant cream of wheat hot cereal.
    …That is what I had for breakers this am. – I LOVED the apples, and will definitely make them again, I added some pumpkin pie spice and used fresh dates instead of the raisins. Are you familiar with dates? I was not, until I moved here to Yuma where they are grown. They are SO sweet and packed with nutrition – I eat them almost daily and the best part is that they are fresh, so easily replace raisins (and added sweetener) in any use and do not take up points like raisins do.
    Plan A: your pumpkin pancakes for breakfast this am. What a great idea, but what was I thinking? I don’t have time to “cook” on weekdays before heading out the door for work – I have no idea why I thought I did today! But your pancakes looked so good… and, then, I thought, wouldn’t your warm apples be good on them, since I had no apple butter. …So I started making the apples. Then I looked at the clock. And then I went to plan B!!
    Plan C: absolutely making your pumpkin pancakes with warm apple topping this Saturday am. I’ll let you know how I like them! =) Ronda

  7. I hope you like them! I really think the icing on the cake (seriously….no pun intended) is a good Pumpkin Butter on top! However, I’m pretty certain a little Pure Maple Syrup would taste great too! Please let me know what you think of them!

  8. Just catching up on your blog – and found these – I plan on trying your pumpkin pancakes tomorrow am! what a find! I have had a box of pumpkin pancake mix in my cupboard (given by a co-worker) that has been SCREAMING my name…. but the points are downright horrid, so hopefully these point-friendly ones of yours will tame my inner pumpkin soul!.

  10. I made these this morning-the texture is interesting but the flavor is spot on! The pumpkin makes them really moist. They aren’t “cakey” like most pancakes. I loved the large serving size and they kept me full all morning! Thanks for a great recipe. I look forward to trying more!

  11. Oh, I wish I did. I’ve never tried to make it.

    I buy mine at a local Cider Mill, and it’s the best! I have tried other brands and honestly, nothing is as good as the one I have bought for years. I have mailed some to a reader before and if you’d like for me to do the same for you, I will!
