5 Week Challenge…Day 20

Before I talk about the 7 miles that I walked yesterday, or the yummy dinner that I made last night, let me tell you about our new neighbors. In the last few weeks, several foxes have decided to make our nice little suburban neighborhood their home as well. I’ve seen some of them over the last several months crossing the street outside of the subdivision after dark, but I hadn’t seen any of them just hanging out in our backyard or in the street in front of our house in the daylight or anything…..until this past week.

There is a concrete storm drain at the back corner of my next door neighbors yard where the corners of our yards meet. Wednesday afternoon, three foxes came in and out of the storm drain off and on throughout the day. They have remained there since, even going so far as to sun bathe on the top of the utility box in the same corner. That’s the corner of our yard that my little Tuckerman likes to sniff around in under the tall grasses that we have planted back there. I’m certain that Tucker wants to play with the foxes, and I’m just as certain that they would like to eat him.

After talking to several neighbors, it sounds like we have several foxes in the neighborhood.

Saturday morning, at 4:00 am, I woke up to a terrible terrible screaming in our backyard. I really thought it was a person at first. Apparently foxes like to eat rabbits, and during the mealtime process, the rabbits scream terribly. It was an awful thing to hear. It lasted forever. Just as it finally finished, and Tucker stopped barking, it began all over again. Rabbit number two for breakfast. Let’s just say I haven’t let the dogs out alone since. I am hoping the foxes find a new storm drain soon.

Now, on with my day.

I knew I had to eat within my points yesterday, choose foods from the simply filling list and get in a few extra miles.

Thank goodness for my walking buddy Becky. I did realize after posting this picture to Instagram that it doesn’t look like we were moving very fast for walking only 7 miles in 2 hours, but I had done the first half mile with my dog, which was more of a slow paced sniff and stroll, then during our walk, we did occasionally stop and do some stretching. At the end of the walk, I was just super stoked that I had completed 7 miles for the day!

No foxes on the path, but we did see some turtles along the way!

Here are yesterday’s eats….

Breakfast – 3 PPV

Toast with 2 tsp Almond Butter, Berries, Black Coffee

Lunch – 6 PPV

Sautéed Red Onion and Sweet Potato in Olive Oil, then one egg white and one egg on top. I love this meal.

Snack – 4 PPV

8 oz of Greek Nonfat Plain Yogurt with one packet of Raw Stevia, 2 T. of PB2 Chocolate and a sliced banana. Lots of protein in this afternoon snack. If you really stir the heck out of the yogurt to blend in the stevia and the PB2, it makes it super creamy.

Dinner – 10 PPV

Um, dinner was delicious. I love it when a “kinda sorta plan” comes together so well. I really wanted a big Chipotle bowl, so I gave it my best go for a homemade version. This is not really a recipe, but l’ll tell you what I did for this yummy burrito bowl, then you can create your own.

  • I cooked 1 Cup of Quinoa in 2 cups of Chicken Broth. When it was done cooking, I added sea salt, lime juice, cilantro and Chipotle Infused Olive Oil to taste. It’s a little like the rice at Chipotle.
  • I boiled chicken breast in chicken broth until they were tender and I could shred them. I added taco seasoning, then put the shredded chicken back in the broth and let it simmer.
  • I combined some store bought Pico (because it is delicious) with canned, rinsed and drained, black beans, corn, sea salt, lime juice, cilantro and Chipotle Infused olive oil. I chilled this in the fridge while the chicken cooked.
  • I smashed up an avocado and weighed it. The entire avocado was 150 grams, which was 6 PointsPlus. Be sure to weigh your avocado if you can so you don’t sell yourself short. I added lime juice and sea salt to my smashed avocado, like I always do.
  • Now I was ready to assemble my bowl. My serving….1/2 C Quinoa, 4 oz Chicken, 1/4 C of Bean and Corn mixture and 50 grams of avocado.

Mike loved dinner, and although he always tells me dinner is good, I know when he really means it, and last night, he really meant it!

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

My Weight Watcher Week Begins on Friday’s

Total = 23

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um…this is a work in progress)
I will go no more than two days in a row without exercise.
I will track every single day for the entire year. No matter what.
I will RUN in a minimum of six 5K’s. Two down, four to go!

 

I know when I exercise with friends, I’m willing to do more that when I exercise alone.

  1. I do love my outside walks. That is amazing that you lost 150 pounds! I’m sorry you are having some health issues, but knowing you did that once must be encouraging to know that you had the strength to do it! I really admire you for that.

    Keep working on that no wheat. It really seemed like it helped you last week!

    Lets both keep doing all that we can to be the healthiest versions of ourselves that we can be!

  2. Wow 7 miles in one day that is terrified.
    When I was able to take walks outside (I have a bad left leg–lymphedema) I used to walk to Wendy’s or Chipotle for lunch or dinner I did this 5-7 days a week and I lost 150 pounds but I haven’t walked liked that since October and of course I gained it back quickly I’m trying to walk a bit more and the no wheat so when school starts on August 12 I want to be down a size in clothes.
    That’s why your enthusiasm and determination motivate myself and others.
    Just like your thought up above we are helping each other–whaahoo!
