What’s For Dinner?

I love to cook. I love being in the kitchen and coming up with something tasty to eat that is low in points. I love playing with different foods. Lately….I can not think of anything that sounds good to make for dinner.

I was out of town all weekend and I knew that I was coming home on Sunday to an empty fridge, because that’s how I left it. Empty. I ran to the store and bought only stuff to make dinner that night. Monday, we never did eat dinner, which is really odd for us. Tuesday, breakfast food for dinner, because still, no grocery shopping and I almost always have eggs. Last night, a quick trip to the grocery store, having no idea what I was going to buy when I got there. I’m hungry, but nothing sounds good. I’m in a rut for sure as what to have for dinner.

I made sure to buy something last night at the store to take for lunch today while I’m working at the Food Truck. I am determined to only eat what I take today. For some reason, this has become much more of a challenge for me than it has been in the past. I am working more days per week than I have in the past, so it’s been a challenge, but I never used to even think about eating the mac and cheese or opening a bag of the chips, and now it’s just all tempting me like crazy!!

Yesterday, in between customers towards the end of the work day,  I grabbed a bag of chips and opened them up and started eating! They are 8 points for the bag. I ate them all, with some chicken salad. It tasted so flipping good!! The salty chips made a Diet Coke sound amazing, so I went there too! I hardly ever drink that stuff anymore, but all of a sudden that’s more tempting too!

It’s one of those week’s that I’m looking forward to my Friday meeting, so I can have my fresh start. 

I weighed this morning, and I still weigh 172, even after the weekend of wine and crab claws dipped in butter.

I’ve walked everyday this week except for Sunday, and that’s a really good thing. Last night was a 5 mile walk, and that felt great to get in. I’m going to my Hot Yoga class tonight, and I’m looking forward to a good sweaty workout. 

I’m out the door to be tempted by the crazy goodness of Food Truck Food! 

I WILL NOT BE DEFEATED BY FOOD TRUCK FOOD TODAY!!!

Here are the eats for the last two days……

Tuesday

Breakfast – 5 PPV

Breakfast Burrito’s, Salsa and Fruit.

Two Whole Wheat Carb Balance Tortilla’s filled with Scrambled Egg Whites and one Laughing Cow Cheese Wedge stirred into the cooked egg whites. I divide the eggs into the two tortilla’s, wrap them up and put them in a skillet with cooking spray to get them crispy on each side.

These would also be great with a crumbled slice of bacon or a little turkey breakfast sausage added to the egg whites.

Lunch – 8 PPV

Un-pictured Raw Unsalted Mixed Nuts while prepping food for the the food truck at the bosses house. I totally should have packed a lunch that day, but I was glad she had the nuts!

 

Snack – 3 PPV?

I snacked on this before dinner without measuring it out…..right outta the bag. BIG Weight Watcher No No!

Smashed Sweet Potato, 2 Eggs, 1/8th Avocado

Wednesday

Breakfast – 6 PPV

Toasted Light English Muffin with One Laughing Cow Cheese Wedge divided on each half,  topped with 1 T. Pumpkin Butter divided on each half, Scrambled Egg Whites, Black Pumpkin Spice Coffee. The Pumpkin Butter on the creamy cheese was DELISH!!

Lunch – 13 PPV

Terrible choice. One Bag of Chips and a Scoop of Chicken Salad. I ate breakfast too early, let myself get too hungry and did not pack my lunch while working at the Food Truck….again!!! No MORE I say. No MORE! (so dramatic)

Dinner – 14 PPV

Grocery Store Salad Bar and Grocery Store Sushi Rolls, weirdest dinner in a long time.

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

My Weight Watcher Week Begins on Friday’s

 

Exercise = Tuesday – Walked 3.5 Miles. Wednesday – Walked 5 Miles

Activity Points Earned This Week = 25

How many ounces of water I drank yesterday = 70

 

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um..this is a work in progress)

I will go no more than two days in a row without exercise. (I’ve done “two a day’s” to make up)

I will track every single day of the entire year. (I’ve only NOT tracked a few weekends this year.)

I will run in a minimum of six 5K’s. Three down, three to go!

 

I’m ending my blog today with a Facebook post from a friend of mine from High School. I love his Facebook Page. He is either posting a one liner joke, or something motivational. I hadn’t seen him in years, and it was so great to see him and give him a big hug at my 30th  Class Reunion this summer.
