Round 2, Whole30, Day 26

Occasionally, Mike works on a Sunday because his phone goes from an average of 60-80 calls a day to almost zero (sometimes people still call!), and he can get a lot done. I really don’t like for him to work on Sunday because I would much rather spend the day together, but any opportunity for him to get caught up a bit, is a good thing. When he does work on Sunday, I tend to get a ton of stuff done at home.

Yesterday I did a lot of housework and a little food prep for the week.

I kept an eye on Mishka and took a few breaks to cuddle. We are not going to the vet today, but the vet and I talked and we are going to see how she does this week, then go from there. Thank you for all of your kind comments, emails and text messages about my little sweetie.

Okay, here is the Menu for the week.

I made up some Tuna Salad for lunches for the week.

I made Apple Fennel Pork Sausage Breakfast Patties. The recipe is for 8 patties, but I made 16 smaller ones. Sometimes I just want a little taste of sausage, and I can crumble one of these up and add to a skillet scramble. I’ll pack two or three for Mike with some scrambled eggs and add a piece of fruit.

I roasted up some Butternut Squash to have as a side and to eat on our salads. This is so easy. Equal parts of Olive Oil and Balsamic Vinegar (about 2 T. each), salt and garlic powder. Roast at 400 for about 25 minutes.

I’m marinating this flank steak for our dinner tonight. If it’s yummy, I’ll share the marinade recipe.

After my chores were done, a couple of friends came over and we chilled on the deck while I waited for the hubs to come home. I had a beer. Apparently I’ve decided to make my own Whole30 rules.

My exercise routine this past week? I don’t know what happened, but I gotta get back to some walking and some Yoga. I’m looking forward to my niece moving in this week and joining me during a walk and some Yoga moves!

I know. Now just sit back and wait for my post on my broken wrist…..or broken something.

Here are yesterday’s eats…

Breakfast – 11 SP

Open faced Egg White Sandwich on Sweet Potato Buns topped with smashed Avocado and Pancetta (which I have never bought before, but I liked the taste and the convenience of tossing just a little in the skillet!) and fruit with a dash of cinnamon.

Lunch – 6 SP

Tuna Salad made with homemade Mayo, Mustard, Dill Relish, S&P and bulked up with celery, onion and shredded carrots. Served over a bed of mixed greens and crunchy veggies and a few Roasted Plantains on the side.

Dinner – 15 SP

Mike and I shared the last piece of Lasagna and I made us a big Salad. Love this salad, loved the lasagna!

I have an allowance of 35 extra Weekly Points that I can dip into throughout the week if I choose.

  1. I love that you started the Whole30 because of my blog! That’s a really nice thing to know. It sounds to me like you learned in 3 weeks what the Whole30 is about anyhow. I think that’s awesome! I agree about getting way off track and feeling it. Isn’t it crazy how it teaches you what your body likes and doesn’t? I love that!

  2. I know. You are right about a glass of wine or a beer, I just really thought I’d go the Whole 30 days again. I do love the food that I am eating, and I feel so much better, and in the end, that’s the goal.

    I’ve never thought to count sodium. That’s a good idea. I swell so darned easily! Is 1500 mg lower than what the average person might consume per day. I’d love to know!

  3. I think you look like you are doing pretty well with eating healthy foods from the looks of the plates you take pictures of. Can a glass of wine or 1 beer hurt? I admire you for following it. I limit myself to 1500 mg of sodium on most days but if I go over a few hundred I just watch the next day.

  4. I started the Whole30 in Jan because of your blog. I made it 3 weeks and loved how I felt. With life interfering I didn’t make it the 30 days, but instead I decided to make it a lifestyle change. I mostly follow whole30 but allow myself 1 cheat meal a week and if I want to indulge in a drink after a long day I allow myself. I found doing this works for me and if I get way off track I feel it. I like reading your blog for the motivation and ideas (plantain chips, yum!). Oh, btw your fridge looks like mine! Lol
