I liked that 9 1/2 hours of sleep thing on Tuesday night. Only 5 1/2 last night, and I’m an 8 hour girl!! I need my beauty rest. For real! I knew this was going to be a full week and that it would be tough to fit everything in, and I was right!
We were swamped at the food truck yesterday and we had a lot of fun. The regular customers that we have on Wednesdays are always so much fun and so appreciative! It was our busiest day yet for a Wednesday lunch, and I think I’ve said that every week for the last four weeks or more! We just keep getting busier and busier!
The rest of my day was filled with Weight Watchery stuff. I have some exciting things to share tomorrow!
After a full day in the food truck on my feet, a walk with Tucker and the rest of my day on my feet, I’m still 2,000 steps shy of making my goal for the day! Can I PLEASE get some credit for standing??? Jeeesshhh!
Gotta go! Full day ahead. Early to bed tonight. I hope.
Breakfast – 8 SP
I slept late and was in a hurry to get out the door to the food truck, so I was happy to find 3/4 of a Big Ass Waffle in the freezer! I warmed it in the micro for a few seconds, then popped it in the toaster. I topped it with Scrambled Egg Whites, 1 1/2 (also precooked and taken from the freezer) Bacon and 1 T. of Pure Maple Syrup.
I drizzled 1 tsp Nut Butter over Banana Slices.
Lunch – 10 SP
Unpictured….Two Bites of Chicken Salad (2 SP) at the Food Truck, then this Burger (8 SP) topped with Mustard and Dill Pickles.
Snack – 0 SP
A Kiwi A Clementine and A Peach
You guys know how sometimes I’m just weird, right? Well, I took Tucker on my walk with me yesterday and I left my phone at home. On purpose. You know, appreciate the trees, the sun, the fresh air, my thoughts? As I was walking, I was thinking about the food that I’d had and I said out loud, A Kiwi A Clementine and A Peach…….and somehow that led to a Priest, a Rabi and a Pastor walk into a bar. I do a similar thing often to Lions and Tigers and Bears, Oh My! I was also thinking about Oprah. I’ll stop now.
I should probably always take my phone, huh?

Dinner – 10 SP
I diced up onions, garlic, bell peppers and mushroom stems and sautéed them. I then added a little diced cooked Chicken and some diced cooked Bacon and heated that through. Then I stirred two Laughing Cow Cheese Wedges and filled up two Portabella Mushroom Caps. Sprinkled with parmesan and baked for 15 minutes at 350.
Mushroom, Grilled Chicken, Roasted Butternut Squash and Grapes.
