This was a happy little accident.
Sometimes I drizzle a little olive oil in the skillet and then I just start chopping and dicing whatever I can find. Sometimes it’s nothing. Sometimes I’m pleasantly surprised.
When my husband says…..”What’s in this?”, I’ know its a keeper.
It was chilly out and a bit rainy. A perfect day for soup. A few staples that I like to have on hand for these days are Stock (Veggie, Chicken or Beef), Rotisserie Chicken meat in the freezer and frozen bags of caulirice. It’s always good to keep onion, celery and carrots too. You can start so many delicious dishes with celery, carrots and onions. Your house smells amazing in the process!
There really could not be anything easier to throw together.
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1/2 red onion, diced
- 1 garlic clove minced
- 2 tsp olive oil
- 2 rotisserie chicken breast
- 4 C chicken stock
- 1 10 oz pkg frozen cauliflower rice
- 1 1/2 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Dried oregano
- Sauté celery, onion, garlic and carrot in the oil for about 5 minutes. Add remaining ingredients and let simmer for about 20 minutes.

Thanks for following me here and on Instagram Lucy. You always have the sweetest things to say and you always make me feel appreciated.
Did you try the soup? Curious if anyone else likes it as much as me or if it was just me? Ha ha.
Hope you are having a great week!
I absolutely love soup. I think I can eat it everyday. My daughter at 16 years young request it often so I’ve taught her well. I’ve never tried caulirice so it’s on my menu this week. Can’t wait to try it.
Thanks!!!
Ronda! Hi sweet friend! Ham and Beans…..ahhh. Love that dish! My mom always made sweet corn bread with it. So dang good. I love the soup bag idea. Thank you for that. Great idea!
Happy my Christmas Card made it to you. Hope you and all the family is well. Think of you often. Hugs back!

Love soup. I have it almost daily for my lunches at work. Make a big pot and freeze portions and they are defrosted by lunchtime. I’m off work this week and made the 15 bean soup from the dried bean section of the grocery store. Threw in our left over ham bone. So so yummy. ❤️ I also keep a “soup bag” in my freezer – throw in the small portions of left over veggies on daily basis vs pitching into garbage- so NEVER know what combo you’ll find in my soup! Also do this with fruit that’s on its last legs for my “smoothie bag”. Recd your beautiful family picture and Christmas card yesterday- so sweet to be remembered. Love all those babies. Have a beautiful day. Hugs from AZ. 😍
