I’m posting late today, and really, I have no “doggie drama” or “cleaning stories” to share about yesterday, so I’ll just tell you what I ate!

I found a recipe for Avocado Enchilada’s on Pinterest, and it sounded so yummy, I knew I had to try it! You can check out the website and the original recipe by clicking HERE! I made a few changes. I only used ONE avocado, and I added a few extra black beans. I didn’t have any corn tortilla’s. but would totally use them next time. My low carb flour tortilla’s were a bit soggy? The filling was great though, and although the recipe did NOT call for chicken, I seasoned some shredded chicken with taco seasoning, and added that to the filling.

I didn’t used to be a big egg fan, but I started to trying to make them so many different ways, I guess I started liking them! 🙂 Do you like yogurt? I like greek nonfat plain yogurt with one sweetener and some added cut up fruit. That’s actually what I had this morning. I used to have that a lot because Greek yogurt has a lot of protein, and again, keeps me full longer.
Have you tried my blueberry pancakes? You make them with oatmeal, egg whites, banana’s and blueberry’s. Good for a variety. I eat oatmeal a lot of different ways.
Dinner leftover’s ALWAY’S make a great breakfast!!

I love that you post photos…your breakfast looks yummy. I will give that a try tomorrow. I struggle with breakfast because I don’t really like eggs and I don’t eat wheat. Makes it tough. Thank you for your post! Xoxox
