Rain or Shine, Cold or Hot, Christmas or not. We are pretty much at our usual corner every Wednesday, and this week was no different. We were spreading some Holiday Cheer! I stuck with the pork and pickles for lunch while working at the food truck, and aside from my wine, I’m eating mostly Whole30/Paleo foods. I can feel a cheat meal coming on though. I found these enormous Brussels Sprouts at the store this week, so I’ve been working them into all of my skillet meals. I’m on a roll with the skillet meals lately. It’s just nice to have a yummy meal that doesn’t require a lot of thought, and always taste great. I didn’t get any exercise in on Wednesday, but I did make it to Jazzercise on Thursday. I ended my week getting in Two Hot Yoga Classes and Two Jazzercise Classes, so I felt great […]

Merry Christmas, Mom
Yesterday was the truly relaxing day that I thought that Monday was going to be. My mom was coming out for coffee, and I had no plans to leave the house, except to go to Jazzercise in the afternoon. I spent the morning wrapping a few packages and just kind of chillin and enjoying my Christmas Tree. Since my mom was coming out, I wanted to make something to eat that I knew that she would really like. She likes sweets with her coffee. and I wanted to make something that we both could have. The last two Tuesday’s, I made these yummy little tortilla’s so Mike and I could eat taco’s. We both loved them! They are made with Coconut Milk, and Coconut Flour, and to me, they have just a tiny tad bit of a sweet taste to them. They are also thin, and remind me a little of […]
Merry Christmas to Me!
Yesterday, I had this great relaxing day planned for myself. Sleep in (because I had watched really bad Christmas movies until 2:00 am!) drink coffee, have breakfast, buy tires for my car (desperately needed!), shop online for a swim suit for our trip in February and go to Jazzercise in the afternoon. I didn’t even have to cook. We had plenty of Soup that I made over the weekend for dinner. I enjoyed my morning, got dressed and headed out the door to go buy tires. When I turned the key, my car wouldn’t start. The hubs just happened to be headed to an appointment that was close to our house, so he stopped by and jumped me. (cracking up right now) Okay, fine. He came by and gave my car a jump start. So now I headed out the door to get new tires AND a new battery! Merry Christmas […]
Living a Healthy Life
Hi Guys. I took a few days off of blogging and then it just seemed to take forever to put this little post together. This past week has been great. My Food Truck Boss was out of town, so we took this past week off. That gave me plenty of time for myself and I was able to finished up my Christmas shopping. Most of it is wrapped and under the tree, and the remainder of it is en route. I planned my Christmas Eve menu, and it looks like the next two weeks are going to be very relaxing. Beyond the Scale If you are a Weight Watcher member, and really, even if you aren’t, you probably know that Weight Watchers unveiled their new plan, Beyond the Scale, last week. I love the name. Weight Watchers is becoming more and more about our health, and not just about the […]
Feeling Excited!
I’m trying so hard to be patient about the new Weight Watcher changes. I’ve read other blogs, read info on Instagram, and chatted with my daughter about the upcoming changes, but I still don’t know what is completely going on and it’s driving me crazy! I WANNA KNOW NOW! I’m a total numbers person, so I’ve always actually liked to track my food. On a few days, it appeared that my app was updated, then other day’s, it does not appear to be updated, so I haven’t really tracked this week. According to the email that I received from Weight Watchers this morning, your app actually changes on YOUR weigh in day. So it looks like I will just have to be patient and wait until Friday to get the full scoop! I did go to Jazzercise yesterday, and that felt great, but I followed my exercise class with an afternoon of […]
Embrace Change
Good Morning! Lots of time shopping. Little time blogging. Eating yummy and healthy food, but having too many cocktails. I did not get the info I was hoping for on Friday at my WW meeting, but through Instagram and Good Morning America this morning, I feel a little more informed. I love change and I get bored easily, so I’m exciting for the changes, and I can only imagine they will be great and positive changes that will help lead us all down the right path. The app wasn’t working for me this last week, but apparently I wasn’t the only one. It appeared to work fine yesterday and this morning, so Yay! I’m keeping this short and not posting my food from the last few days. I’ve been eating a lot of the same foods that I usually eat, so no new recipes or links to recipes, but for certain too […]
The Spirit of Christmas
I hope we are always able to continue our tradition of everyone coming over at Christmas to open presents. I can’t imagine a Christmas without the living room filled with everyone (thirteen of us this year) opening presents and watching the wrapping paper and bows pile up and the grandkids yelling with excitement when they open even the simplest of gifts. One of my favorite memories was when one of our grandsons yelled “It’s just what I wanted my whole life!”. I don’t even remember what it was, but I’m pretty sure it was under $10. Ahhh…the spirit of Christmas. Each year I go nutzo crazy on stocking stuffers (another tradition I’ve carried on from my mom) for everyone, and handing each person their stocking and watching them go through them one item at a time, is one of my favorite parts of Christmas. I’m practically done Christmas shopping! I’ve never had this much […]
Taco Tuesday? Yep.
I love discovering new websites and finding recipes that I want to make. Thanks to some awesome new Paleo websites that I’ve found, dinner was a hit and had Mike giving me high fives through our entire meal. Since it was Tuesday, I decided we needed some tacos. I also decided that we were going to eat some tortillas! I made Fish Taco’s, I made Cauliflower Rice, and I even made homemade tortillas. We both really liked the rice, but you guys…..the tortillas were awesome. Not only did they taste great, they were surprisingly east to make! Check out paleomg.com for the easy Cauliflower Rice recipe, and check out paleonewbie.com for the delicious and also easy, Tortilla recipe. The rest of the day was pretty darned good too! I went to Jazzercise two days in a row. Miracles do happen. I was 15 minutes late, but I made it! I’m out the […]
Three Squares
Food One of the biggest lessons that I wanted to take away from doing the Whole30, was gaining more control of what I was eating in between meals. Before Whole30, I was snacking a lot on fruit, then not tracking it since it was zero Weight Watcher points. During the Whole30, I did a great job of either not snacking at all in between meals, or “mindful” snacking. I would make a snack, sit down and eat it. Mindful snacking left me with no guilt about whatever it was that I was eating. Standing at the fridge or pantry and grabbing a few bites of something and mindlessly eating eat, left me knowing that I was eating for all of the wrong reasons. Yesterday, I thought about snacking all darned day! I had a few dates and nuts, but struggled with not having more. I would have been better off having none at all. […]
