Taco Tuesday? Yep.

I love discovering new websites and finding recipes that I want to make. Thanks to some awesome new Paleo websites that I’ve found, dinner was a hit and had Mike giving me high fives through our entire meal.

Since it was Tuesday, I decided we needed some tacos. I also decided that we were going to eat some tortillas! I made Fish Taco’s, I made Cauliflower Rice, and I even made homemade tortillas. We both really liked the rice, but you guys…..the tortillas were awesome. Not only did they taste great, they were surprisingly east to make!

The rest of the day was pretty darned good too!

I went to Jazzercise two days in a row. Miracles do happen. I was 15 minutes late, but I made it!

I’m out the door to work the Food Truck in this 40 degree weather. Boo Hiss Hiss.

Here are yesterday’s eats…..

Breakfast – 9 PPV

Egg White and Pork Sausage Scramble topped with Smashed Avocado with a Pear and Dates, Black Coffee

Fish Taco’s (I used Cod and the Simply Organic Fish Taco Seasoning from Whole Foods) with Tomatoes and Smashed Avocado, Cauliflower Rice and Plantains.

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

My Weight Watcher Week Begins on Friday’s

 

Breakfast = 9

Lunch = 6

Dinner = 17

Total = 32

 

Exercise = Jazzercise Class

Activity Points Earned for the Day = 3

Activity Points Earned This Week = 8

How many ounces of water I drank for the day = 60

 

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (I’m sucking pretty good at this goal)

I will go no more than two days in a row without exercise. (I did great on this until about the beginning of October)

I will track every single day of the entire year. (I’ve only NOT tracked a few weekends this year.)

I will run in a minimum of six 5K’s. Done!
