I’ve been terrible about putting new recipes on my blog. I’m just not very good at writing recipes. Maybe a new 2016 Goal?? Learn how to properly write a recipe!!
I’m a new fan of cauliflower rice, and because of this, I want those of you that like cauliflower, to give it a try!
I promise, by the end of the week, to write a recipe on how to make cauliflower rice. It’s super simple.
Put cauliflower in a food processor until it looks like rice. Then put your “rice” in a pot with just enough broth to make the cauliflower moist. Cook on medium until cauliflower is soft. Season to taste. There…. that’s the recipe!!
Okay, I will actually give a more detailed recipe.
Now, here are yesterday’s eats….
It was a very tasty and satisfying Whole30 day eating lots of food!
Breakfast – 7 SP
My favorite skillet scramble. Zucchini, Red Onion, 80 g cooked Sweet Potato topped with an egg and 20 g Smashed Avocado.
Lunch – 6 SP
Leftover Cod with Fish Taco Seasoning served over Cilantro Lime Rice and topped with Avocado
……and a Pear.
Snack – 5 SP
Tuna (3oz) Salad made with Whole30 Mayo, mustard, celery, salt and pepper, 10 g Plantains, Carrots, Strawberries
Dinner – 9 SP
Chicken and Broccoli Stir Fry served over Cauliflower “Fried Rice”….YUMMY…..
Here are my 2016 Goals
1. Make time each week to Meal Plan.
2. Drink 100 ounces of water each day.
3. Exercise 5 days a week.
4. Focus on Three Meals and One Snack, daily.
5. January 3rd, Begin The Whole30.
Weight Watcher’s
I can eat 30 SmartPoints a day.
I have an allowance of 35 extra Weekly Points that I can dip into throughout the week if I choose.
My Weight Watcher Week Begins on Friday’s
Breakfast = 7
Lunch = 6
Snack = 5
Dinner = 9
Total = 27
Exercise = Jazzercise
How many ounces of water I drank for the day = 100+

I’m so glad you made that salad! I bet the dates were awesome in it! Isn’t it sooooo good??? I already decided next time that I host a meal for girl friends, I’m making that salad. You should come! 🙂

Your food always looks SO good! I’ve got to tell you, every time I scroll thru your food pics I have this thought “I wish she would could all my meals….If I were Oprah….I’d have Julie come cook for me…” =) but alas, I will just keep making a big pot of something or two on Sundays, and heat up left overs for the rest of the week… LOL. I did make your suggested recipe of the green salad with roasted squash, apples, bacon, egg, etc with Apple-Maple Vinaigrette – It was OUTSTANDING – and will definitely will be in my rotation of recipes. The only change I made was substituting the dried cranberries with (guess what, here…) … dates! Hey!, it IS a good day to have a good day! Ronda
