Day 30! While I did a great job with my food these last 30 days, I did end up having a glass of wine or a beer on a few days towards the end of the 30 days. The important thing is that I feel awesome. I’m eating a great variety of whole foods that I love, I’m always trying something new, I have lots of energy, I’m sleeping great, and I’m happy with my food choices. What more could you ask for on a journey to a healthier you?
I have more time tomorrow morning to write a recap of where I’m at on the scale, and what I plan to eat from now on, but for now….here’s what went on yesterday
A couple of different friends of mine had told me about this free magazine at one of my favorite local grocery stores, and I’m glad they did. All sorts of yummy recipes and some great articles too!
I want to make both of these recipes!!
This guy and I got in a nice little walk yesterday afternoon.
The walk around the lake was great, but check out these clouds!
When we got home, he snuggled up to his sister. She’s not really doing much better, so it’s kind of been a sad week.
It’s a Food Truck Day, so I’m out the door.

Here are yesterday’s eats…
Breakfast – 9 SP
Breakfast Pizza, Frittata with huge Blackberries on the side.
I sautéed several veggies, then I chopped a cooked Purple Sweet Potato and grabbed some cooked Pancetta out of the fridge. I poured my whisked eggs into the skillet, then added the toppings and cooked on medium low with a lid on it until the eggs set.
Picked it up and ate it like a Pizza!
Lunch – 8 SP
Tuna Salad, Veggies, Plantains and Avocado
Dinner – 12 SP
Paleo Sweet Potato and Chorizo Enchiladas with Gluten Free Tortilla’s
Another yummy recipe from Trina @ PaleoNewbie.com. I think with any new recipe that includes several ingredients, it can take a while to make the first time. I made the Enchilada Sauce and the Tortilla’s from scratch, so this required some time, but it was so good and I will be making these again for sure.
I also made some Cauliflower Rice and added a little homemade Taco Seasoning and Lime Juice to it. Mike raved about dinner, and had seconds. 🙂
