Yesterday was spent mostly outside, and I loved it. Today’s high? 82. It should be another beautiful day spent outside!
Yesterday I walked, I mowed, and I babysat Char and we went to a patio party for Cinco De Mayo.
I walked 5 miles yesterday and that puts my total miles for the month at 12. I’d like to have 25 miles in by the 8th, and that means 4+ miles a day for the next three days.

I mowed my yard yesterday and now everything is so nice and green, it’s time for some flowers. Mother’s Day weekend always seems like a great weekend to do that, so maybe I’ll get some purchased today.
I filled up the crockpot with frozen Chicken Breast, Homemade Taco Seasoning and Salsa, so we will be eating on that for a few days.
Cook all day, shred. So easy and so many things you can make with it!
Last night, a friend of ours had a few people over for a little Cinco De Mayo party. I was babysitting my granddaughter, and I decided to load up the wagon with toys and snacks and walk to the party.
Char made all sorts of new friends, but she was a total flirt and seemed to gravitate towards the guys. She apparently doesn’t have a shy bone in her body. Everyone was super sweet and gave her their attention.
Here are yesterday’s eats….
(I made a ton of Roasted Butternut Squash and Taco Meat to take on my girls trip. I have so much left over, that’s all I’ve been eating!)
Breakfast – 7 SP
Two Eggs over Roasted Butternut Squash with Avocado. Bananas cooked in Coconut Oil in the skillet, sprinkled with Sea Salt and a dash of Cinnamon.
Lunch – 10 SP
Taco Bowl with Taco Meat, Cilantro Lime Caulirice, Roasted Butternut Squash, Smashed Avocado and Roasted Plantains.
One Beer at the party – 5 SP
Dinner at home – 6 SP
Chicken on Corn Tortilla’s with Goat Cheese and fresh squeezed Lime Juice. Plantains.

I love grandkid time. They are just so stinkin cute and you know they love you.
I have discovered in my past walking challenges that getting in just over 3 miles a day is the best way to complete the challenge without any stress. Day 1 I walked 2 miles, Days 2 and 3 I was on my girls trip and didn’t walk at all, so I feel like I keep playing catch up. I’ll get there. Hope you stick it out with me!

Char is adorable! Our grandkids have been in Georgia for the past month (visiting their dad/our son, who is there at a 4 month training session), but the good news is that our DIL is coming to stay with us in another week and half, and staying for a week with the two kiddos – so Brian and I will be in grandparent bliss!! My walking goals are not doing so hot – I’ve been fighting a cold and have layied low all weekend trying to get over it… But I haven’t given up!!! =) thanks for keeping us all accountable! Ronda

Latiffany! You are killing this challenge! I gotta pick up my game! I’m so glad you joined me for this challenge and I’m so glad you are excited.
