No matter how much planning goes into the weeks meals, some days end up being random for one reason or the other.
Breakfast
I was trying to get in as much protein as possible, so I wouldn’t be hungry while working at the food truck. Breakfast was odd, but yummy. I learned while doing Whole30, dinner leftovers are awesome for breakfast!
Lunch
In case I did get hungry at the food truck, I made myself some Tuna/Egg salad to take with me. Typically, when I make my lunch in the morning, I put it back in the fridge, then I set my car keys in the fridge on top of my lunch so I won’t forget to take it with me. Smart, huh? Yeah, I think so. Yesterday, I couldn’t find my car keys and decided that I would just find them before I headed out the door and then grab my lunch.
Found my keys, forgot my lunch, got hungry at the food truck, ate some Chicken Salad.
Dinner
I have this recipe for a Sweet Potato Pie Quiche that uses Sweet Potatoes, sliced thinly, and lined in a pie plate for the crust. I have not made this recipe yet, but I have been wanting to make the crust part of the recipe, then make a Sweet Potato Taco Pie! Doesn’t that sound good? Anywho, last night I attempted a Sweet Potato Taco Pie. It totally fell apart.
I made a yummy salad on Tuesday night, so I made a smaller portion again last night to eat with our Fall Apart Taco Pie.
I discovered the Tessemae Products while doing Whole30, (I ordered them online and I don’t believe that they are available in stores?) Two of my favorites were the Dijon Mustard and this Honey Mustard Dressing. A serving size on the bottle is 1 tsp and is 10 calories. I need to order more!

Walking Challenge
I met a new neighbor a few weeks ago while I was out on a walk, and she was outside with her puppy. I knew that she had just moved in, so I stopped to introduce myself. We chatted and she mentioned that she liked to walk too. After stopping by her house a few times and missing her, I put a note in her mailbox with my cell number and my website so she could check me out and see if she thought I was a weirdo or not. I guess she decided I wasn’t too weird, because yesterday she sent me a text and we walked together! Always fun to meet new people!

It did taste good, but before I try it again, I’ll figure out a way for it stay together better. I could eat Taco Meat everyday, so I gotta get on this!
