Another Whole30, Day 1

Yesterday went really well and I swear I feel better already. It’s a mental thing. I’m aware.

I made breakfast for me and the hubs. He’s been working from home quite a bit lately, so no need to prep his breakfast the night before. Now we just eat breakfast together like a real couple! Every morning now feels like Sunday.

My planned one hour workout for the day? Mow and edge the lawn before it got too hot. That plan ended up being a 90 minute lawn mowing, edging and weed pulling session that had me overheated and dead! Egads it was HOT! Hydrate! Hydrate! Hydrate!

After my resurrection, and a cold shower, I met my mom for lunch at Panera. She walked in the door and said that she was too hot to eat. I wasn’t really hungry for lunch yet anyhow, nor had I decided what I would order. She had ice coffee, I had ice water.

After drinks with mom, I went to Trader Joe’s and Whole Foods, where I bought a few of my Whole30 favorites along with these beautiful squash!

I made myself a yummy salad for lunch while I was at Whole Foods.

After putting groceries away, I did a little food prep. I made Zoodles and baked a Spaghetti Squash.

I opened up my Whole30 book and gave myself a little refresher course. It was good to not only remind myself of the things that I could not have, but it was a great reminder of all of the foods that I have CAN have! I forgot how many great recipes are in that book!

Here is what I ate yesterday.

Breakfast – 8 SP

Big Scramble with Egg Whites and one Egg, Pork Sausage and leftover Grilled Asparagus all topped with home grown tomatoes (not my home) and a few slices of Avocado.

Lunch – 10 SP

I was starving by the time that I got to Whole Foods. It was about 2:30. I love that Salad Bar. All of the ingredients are listed, so I knew what I was eating. All of the food and spices in my salad are Whole30 compliant.

Ground Beef with lots and lots of veggies and a little guac.

Dinner – 6 SP

Turkey Spaghetti over Spaghetti Squash and Zoodles with Nutritional Yeast.

  1. I bought the cheapy white plastic thing that looks like an Hour Glass shape at Walmart. $14? It was in the As Seen On TV section. Works great for zucchini, sweet potatoes, cucumbers, etc.! If you buy it though, wash it with really hot water right after using it, otherwise the green from the zucchini and the orange from the sweet potato seems difficult to get off of the plastic?

    I did just buy a larger spiralizer because I wanted to spiralize Butternut Squash, and I needed a larger tool for that. It was on Amazon for $30? It sets on the counter with rubber suction cup feet. It’s pretty damn cool.

    For the Butternut Squash, (if you buy a big one) I sautéed that in a skillet with onions and olive oil ( 20 minutes?) and ate eggs on top of it like hash browns. Yum.

    For the Zucchini, I have sautéed it with garlic and onions for just a couple of minutes to eat with spaghetti, and that was good. It is easy to overcook, then its a bit mushy. I’ve discovered that I like the texture better by not cooking it at all, or barely cooking it.

    Yesterday, I added the raw Zoodles to the skillet of spaghetti sauce and heated it up for just a minute or two, and we seem to like it that way the best.

    I’ve heard that it makes a great salad raw, but I have yet to try that? Maybe tonight?

    Ahhhhhhh…..I love a tootsie roll!! I still can’t believe sometimes that I go 30 days without eating any sugar, even the fake stuff. During Whole30, you are not even to drink artificially flavored coffee, and there is a lot of that in my pantry!! I’m still surprised I drink black coffee all the time now, and really enjoy it.

    Pastries and cookies and brownies and Peanut M&M’s?? I love all of that stuff. But I honestly do not miss it when I tell myself that I just can’t have it. Sugar is a huge trigger food for me, and if I have sugary stuff in the house, it doesn’t last long. I wish I had the ability to eat one serving of Tootsie Rolls and call it good, but if I eat one, it’s all my brain thinks about and it drives me crazy until I eat more of it, or throw it in the garbage disposal.

    Fruit with a little almond butter is what satisfies my sweet tooth now, and I really do love it!

    I big tray of rated veggies sounds delicious! 🙂

  3. That’s awesome! Both of those books are great. They wrote the Starts with Food first. If I remember right, it focuses on how different foods can affect our bodies. The Whole30 is more about the 30 day plan, and I think it is an easy read. I like that book the best and it is the one that I bought and read first. Both very informative though!

  4. I have yet to try zoodels but yours look so good. Do you cut them up in bulk and then cook them as needed. Or cook them all then heat up as you use them?
    I went and shopped for the gadget to make them but there were too many choices from $/plastic to $$$$/almost commercial – so I ended up buying none! What type do you have ?

  5. I must commend you for eating like this. I don’t know if I could do it. I have this weakness called Tootsie Roll Midgets.. I limit myself to what a serving is everyday. I am addicted to them.

    What I like most is to roast a bunch of vegetables in the summer and call that a meal. Some
    sweet corn and home grown tomatoes and I am good to go. But gotta have those midgets. Frankly I don’t know if I could go without some form of sugar every day.

  6. Your meals look great as always. I decided to read my Whole 30 book and a companion book that I bought. I think it’s called, It Starts With Food. I want to learn how to make some of the meals before committing to 30 days. I’ll definitely be using your recipes for inspiration.
