It is so strange how just running a few errands and being out of the house can wear a person out after two weeks of doing nothing.
Friday I chilled.
Friday night, in the middle of the night, I had to get up two times to change my completely wet clothes. Hot flashes and now night sweats. Hot damn! literally. HOT DAMN!
Saturday, Mike and I car shopped.
Early last summer I bought a Kayak. I took it out one time before my mastectomy.
One of the things that I am most looking forward to is getting that kayak out on the water when the weather warms up!
Getting it on top of my car was almost impossible to do alone, so I was going to need to trade vehicles with Mike if I wanted to take it out. Not convenient.
If you have been reading the blog for a while, then you know a Vintage Trailer is in my future. My dad has one and I can not wait to join him in this fun new hobby. Camping with my dad in our vintage trailers side by side and meeting others through some of the vintage trailer camping clubs sounds like so much fun to me!
My dream trailer resembles one of these…..
Mike has been on the hunt recently for a vehicle for me to throw my kayak into and also to pull my future trailer with.
Yesterday, we bought a truck. I am ecstatic. We pick it up tomorrow.
Our daughter Kate and her family came over Saturday night for pizza and games. It was a great day, but at the end of it, I was pooped.
Today….rest.
I did make a skillet hash on Friday to have over the next few days. This was super simple.
I sautéed all the veggies in Olive Oil, added salt, then added in half of a cooked, diced sweet potato.
I divided this into three servings so I would have leftovers for an easy breakfast prep in the days to come.
Remember I said that I cooked, then froze lots of protein before surgery? I pulled some seasoned chicken out of the freezer Friday afternoon.
I wasn’t sure exactly what I was doing, but I added these and some corn. I didn’t have any beans, but I remember an old WW recipe that called for a can of refried beans and it makes for a nice thick Taco Soup!
I gave it all a good stir, then added this. Dinner was ready!
Friday
Breakfast – 4 SP
Omelet with fruit and black coffee (3 Points for potato and 1 point for 1 tsp olive oil)
Lunch – 5 SP
Lots of fruit lately and a handful of un-pictured raw nuts.
I love a Pear with Cinnamon sprinkled on it and Pineapple is so sweet it’s like dessert!
Dinner – 9 SP
Taco Soup topped with a little cheese, chips and Avocado.
Saturday
Breakfast – 8 SP
I grabbed something to eat in the car while we headed out to car shop. A yummy RXbar, grapes, berries and a banana.
Dinner – 29 SP
Mike and I should have grabbed some food while we were out car shopping, but didn’t. We ended up being at the dealership for a really long time, and when we left I felt light headed and a bit nauseous. Dumb.
By the time we got home, Kate and her family were there and they had picked up the pizza and some bags of salad. I was starving!!
I ate three slices of this Veggie Lovers Papa Murphy’s Pizza, two servings of salad of some chips while waiting on the pizza to cook. Did I mention that I was starving??

Thanks Kim! I’ll look into those. I have to chat with the oncologist about anything I take, so I’ll add those to my list of options to discuss. This whole night sweat thing is kinda gross! lol
