Today it’s colder than a wi…………… well, it’s really cold.
Icy roads, schools cancelled and most morning WW Workshops closed as well, so I took the opportunity to curl up by the fire and say hi to you all.
I chose “Create” as my word for the year. Creating boundaries, creating spaces and creating routines were at the top of the Create list.
Creating a routine was something I really wanted to do for 2020. Being back in the yoga studio has reminded me how strong I feel when I am there and how much I appreciate what my body can do for me. I have created a Yoga schedule for the week and that feels really good.
I put my yoga classes and walks in my calendar as an appointment with myself. This is feeling really good. I got in a nice brisk walk before the Chiefs win on Sunday!

Apparently January 17th is National Quitters Day? There’s a day for everything now I guess. Well, I’m having none of that quitting thing so I’m on board with National Recommiters Day cuz I guess now that’s a thing.

Food Talk
This was one of our favorite meals this week.
I made this using 93% ground turkey and Franks for the hot sauce. You could also make this with shrimp, which I think I might try the next time I make this yummy dish!
I always make extra and we both loved it so much we had it for lunch the next day, dinner the next day, and lunch the following day. I guess you could say that we both really like this recipe. Like, a lot.
Looking for easy? I’ll toss just about any veggie on a sheet pan with 1 T Balsamic Vinegar, 1 T Olive Oil and a sprinkle of sea salt and roast at 400. 30-40 minutes depending on the veggies. These made a great side dish with a simple protein.
Butternut squash crinkles from Trader Joe’s, green beans, purple carrot ribbons made with a veggie peeler and red onion. I love how sweet a red onion makes everything.
Mikes all-time favorite dish? Meatloaf.
I tried a new recipe for the heck of it and this was a great choice.
I used 93% ground turkey and made this Meatloaf with Mushrooms recipe. The recipe uses mushrooms to bind the meat together and no bread crumbs are needed. It’s a very simple recipe with few ingredients. This was ridiculously delicious according to me and the hubs. I roasted the other veggies on a pan while the meatloaf cooked cooked in a loaf pan, then placed everything together for this yummy pic.
The Veggies? Olive oil, sea salt and pepper. Keep it simple.
What is your favorite “worth it” party food?
Not every bite of food is going to be low in Smartpoints or low in calories and fat and that’s where balance comes into play when figuring out how to work some of these yummy foods in.
This is a favorite of mine and I made them to take to a friends house last weekend for the Chiefs game. Because we are all required to wear the same clothes (underwear excluded…wait, we will be wearing underwear, but ya know), sit in the exact same spot, drink the exact same beverage and eat the exact same foods, we’ll be enjoying these bites of heaven again this Sunday!
We’re definitely having some wintery weather here in KC.
Saturday the Vision Board Party was canceled and rescheduled for the end of the month so I’ll be sharing that fun event in a future post.

No, I haven’t tried this Egg Roll in a Bowl recipe. I used another one off Pinterest, which I’ve now deleted. I’ll be trying yours soon! And don’t worry – there will be lots of loud, loud shouting from Nashville come Sunday! Can’t wait!

Meanwhile, I loved your post today and the recipes (that meatloaf looks amazing!) and your ever-faithful encouragement on this journey. I’m going to borrow your word for the year (giving you full credit of course) because I’m in a creative state of mind right now. The office you created last fall – in your basement, if I’m remembering right, inspired me to stop procrastinating and do a bedroom makeover I’ve been wanting to do for two years.
