Steps and More Effie Stories

Yesterday I coached my Workshop from my deck. It was beautiful outside and early enough in the day that I couldn’t hear any kids or dogs, so working from home had a whole new meaning yesterday. I’m thinking about some Effie Workshops. Some of the Kansas campgrounds will be opening soon and that feels like a safe and fun thing to do. Who knew I’d one day be combining two loves of mine, coaching workshops and camping! I spent some time at my dads house working on my trailer. I still have several small things that I would like to do, and it’s a great way to occupy my time. I don’t want to bore you with Effie stories everyday, but I’ve been spending a lot of time over there playing. I have been mulling over ideas to make the dinette area comfortable to sit in while also having the […]

Quick Hello

I had this all ready to post this morning, and then forgot to post it! I rolled out of bed yesterday morning and thought it would be fun to have breakfast and do a little work in Effie. The weather forecast included storms and hail in the afternoon so I knew I wouldn’t be there long, but I’m feeling very fortunate right now to have my little Happy Place that I can visit. I paid bills, read emails…..coffee…..coffee…..coffee. Several times, I closed my eyes and felt my toes in my faux fur rug. I don’t hate it. Do they make faux fur slippers? That would be amazing! I’ll Amazon search that today. I found this packet of Nut Butter in my camper cupboard. Happy surprise to add to my bowl. Breakfast Two Good Yogurt with Berries and Nut Butter Snack Roasted Butternut Squash sprinkled with Cinnamon Dinner Aidells Roasted Garlic […]

Oh Effie, How I Love You

I am fairly confident that I’ll regret this decision, but I bought white faux fur rugs for Effie and I think she is now about the cutest thing I’ve ever seen. Seriously. That day that I spent in her last week? Like ALLLL day? I started dreaming about how she could be even cozier. I thought about all of the things I enjoy decorating with right now and what makes me feel cozy and relaxed. Within minutes I’d made my Amazon purchases and yesterday I spent the morning playing in her. Now…..I am aware that the first camping trip that I am on and it begins to rain and I’m out walking in it and become a muddy mess, I may regret my recent purchases, but they are rugs. I can always pick them up off of the floor and put them in the truck if I need to. They […]

Drive By Meeting

Mike and I went for a nice drive yesterday in the convertible. It wasn’t something we had planned for the day, but the weather was absolutely gorgeous and after two weeks of patiently waiting, we were going to get to meet Kapri, our newest grand daughter. We kept our distance, stayed in the car, wore mask and it was strange for sure. But it was so nice to be able to see that precious little bundle in person. New born babies are soooo tiny. How do I forget that? She has long fingers and toes, lots of hair and is of course, perfect. It was great to see the family but I’m anxious for when we can all gather at our house again. Some days that feels like forever away. I think about how that might be different when it does happen. Look at that sweet bundle. Before meeting Kapri, […]

Weekend Morning Coffee

Weekend morning coffee is often a little better here than M-F morning coffee. If your schedule looks different M-F than it does on the weekends, and you’re a coffee drinker like myself, you might relate to that. There is something about sipping that morning cup with no rush to get anything done while you put your feet up. I realize things may look a little different right now for many of us, many of you not having a traditional weekend, many not knowing which day it is even if you are working, not really having anywhere to go if you’re now working from the basement or the spare bedroom, or maybe you’re working outside of the home and life just feels crazy as can be. I’m still savoring that morning cup just a little bit more on the weekends. Tess, my daughter in Dallas, likes her morning coffee just like […]

Rainy Days and Soup

After my Friday morning Workshops, I spent the rest of the day listening to it rain and reading recipes. I took a 2 mile walk when the rain took a break, then had a 5:00 pm Zoom Work meeting, then a 6:00pm Zoom Happy Hour with co-workers. That was kinda fun. We never really spend time together outside of the Workshops and since we work with the same teams much of the time, there are many co-workers I don’t really know at all, so it was fun to just chill, not talk shop and get to know a few people a little bit better. It feels good to blog daily. It’s been almost 2 years since I’ve done that. Stupid Cancer messed up a lot of stuff and then my entire schedule changed so much. Having more time now has allowed me to work it back in to my day. […]

Cheeseburger, Cheeseburger

Cheeseburger, Cheeseburger. It’s an old SNL skit with John Belushi, Chevy Chase, Dan Akyroyd and a few other SNL old school regulars. I couldn’t get Cheeseburger Cheeseburger out of my head after my Workshops yesterday. The topic of the Sonic Cheeseburger commercial (I haven’t seen it) came up at a couple of Workshops and then I was craving a Cheeseburger like crazy! I turned to the WW App after recommending that to the WW Members, and I discovered several Cheeseburger recipe ideas. Bacon Cheeseburger, Cheeseburger Casserole, Cheeseburger Tortilla Pizza, Cheeseburger Crunch Wrap, Cheeseburger Bombs, Greek Style Cheeseburger and a Slow Cooker Cheeseburger Soup! That was the one that stood out to me right away and I had all but one ingredient that I thought I could do without, so that was my pick, WW Cheeseburger Soup for dinner. A little info for my WW Members…. You can type anything in […]

Just What I Needed

Yesterday I gave myself permission to not do a damn thing. It was perfect. It was just what I needed. I started the day with coffee on the deck. I relaxed. I rested. I had zero expectations of my day except to just chill. After my morning Workshop I packed my lunch and headed over to Effie, my travel trailer. I cranked up the tunes while I put my new trim and screens up inside. I made a pot of coffee, I wrote in my journal, I made another pot of coffee (It’s the mini pot). I shopped on Amazon and ended up buying a peel and stick chalkboard for my mini fridge, new rugs and new curtains for Effie. It’s dangerous sometimes just to sit in her in and dream about things I think I need. Coffee taste better there, especially when I drink it out of my little […]

Today Is a New Day

In yesterday‘s post I said I was going grocery shopping and for you to wish me luck! I’m just gonna say that if you did wish me luck, your wish was not granted. I recently learned about a wholesale company offering something called a “community box” right now for $20. You pay $20 cash and you get whatever is in the box. I’ve talk to several (WW) members and I’ve seen many friends post on Facebook about how great this box was. I decided to give it a try. Something different. Something fun to get out and do. Add a variety to my already stressful grocery shopping. Right? I made the 30 minute drive downtown and when I got there I was overwhelmed with the amount of cars in line. There were three lines of cars coming in from three different directions to get into the parking lot to drive […]

I Miss Grocery Shopping

Grocery shopping has certainly changed. I miss being able to just run into the store and grab a few things. I miss strolling the aisles at Target with my coffee and throwing things in my cart that I don’t need because they’re $1. I miss how easy it was to just go to the store. We have been eating a few weird things these last few days as I’m trying to only shop every 7-10 days or so and our choices now at home are limited. I love going to the grocery store. I know that a lot of people don’t like to do that but I do. I love shopping at different stores for favorite items, checking out any new items to try, stocking up on fresh fruits and veggies, organizing my pantry and fridge when I get home. I know this sounds silly to some, but there is […]
