Keep Moving

My mom is always saying…”You’re just so busy!”. It always surprises me when she says it because I’ve always been that way. Moving helps your joints and can improve your overall health. Some days I will take a 4 mile walk, then not do much the rest of the day. Other days I will have errands to run, projects to work on, task for the day and never get in a “walk” but I’ll end up with double the steps I had on the day that I got in a 4 mile walk. The idea for me is just to keep moving. I like to be on the go. Some days I plan “not to walk” because I know I’ll be moving, doing things, lifting items, staying busy.

That all being said, yesterday I had just over 10K steps but I never did “go for a walk”. I spent the day again at my trailer. I’m painting all of the window trim inside the trailer, so I had to remove it, remove the screen from the trim, sand it, fill some holes, sand it again and paint it. Hopefully tomorrow (Tuesday) I can put the new screen on and put them back on the trailer walls.

Anywho…..it was a busy day working outside in my dads yard where I park her. He has a big yard so painting and any other projects I want to work on, there is plenty of space.

Again, I skipped lunch and ate breakfast and dinner, then drank a Tank 7 (best beer ever!) for dessert.

Breakfast

These are so easy. This is a great breakfast to make for later in the week too! You choose your fillings, add whisked egg, s&p and bake at 350 for 20-2 minutes.

Yesterday I cleaned out the fridge and included diced ham, onion, bell pepper, tomato and cheddar cheese.

Dinner

I put two chicken breast in the crockpot on low at around 11:00 am along with a can of fire roasted tomatoes and a carton of chicken stock. I wasn’t sure what I’d make with it, but really with shredded chicken, so many options.

I came home around 6:00 and these were ready to shred. They fell apart with little shredding at all.

After looking through the fridge (not much in there right now) and freezer, I decided to make both of these and top my shredded chicken with them along with Taco Seasoning.

Mike and I ended the day here……such a good day.
