Rainy Days and Soup

After my Friday morning Workshops, I spent the rest of the day listening to it rain and reading recipes. I took a 2 mile walk when the rain took a break, then had a 5:00 pm Zoom Work meeting, then a 6:00pm Zoom Happy Hour with co-workers. That was kinda fun. We never really spend time together outside of the Workshops and since we work with the same teams much of the time, there are many co-workers I don’t really know at all, so it was fun to just chill, not talk shop and get to know a few people a little bit better.

It feels good to blog daily. It’s been almost 2 years since I’ve done that. Stupid Cancer messed up a lot of stuff and then my entire schedule changed so much. Having more time now has allowed me to work it back in to my day. I hope to continue! Blogging daily encourages me to try new things so I can share them with you. It encourages me to make healthy choices and hopefully you feel inspired to do the same. It keeps me active because I don’t like blogging about my day and not being able to say that I did something active, whether it’s a 2 mile walk or a 4 mile walk or some yoga. So, thanks for sticking with me. Thanks for reading. Thank you for your recent emails and comments. They are always greatly appreciated and I am inspired by them to continue.

The five pounds I gained the last several days of March is now gone!

Breakfast

This was a fun little find in the WW App. WW 90-Second Mug Muffin

1/3 C Quick Cooking Oats, 1 egg, 1 mashed ripe banana, dash of Cinnamon, mix all together and microwave for 90 seconds in a 2 cup mug.

I cooked mine a little longer, until I could pull out a clean toothpick. Maybe another 30-45 seconds? I added 1 large chopped Strawberry, a few drops of vanilla stevia and topped mine with 1 T. Vanilla Two Good Yogurt. It tasted like a mini banana bread. Next time I might try this in a ramekin, but this worked well too.

Lunch

Leftover WW Cheeseburger Soup. Soup taste so much better the second day.

Snack

I roasted some Butternut Squash, Broccoli and Red Onions to snack on since I hadn’t had many veggies recently. Strange snack, but warm food was tasting really good yesterday.

Snack

When I made the Big Ass Waffle recipe for breakfast this week, I doubled the recipe for Mike and I. I have a smaller Waffle Iron, so doubling the recipe actually gives me three nice sized waffles. I saved one for snacking. This is 1/4 Waffle, heated, drizzled with 1 tsp Nut Butter and 1 sliced Strawberry. Yummy with a cup of hot tea while sitting outside listening to the rain yesterday.

Dinner

Taco Soup with crushed Trader Joe’s Roasted Plantains. This was in the crockpot all afternoon and made for a cozy dinner while sitting outside with a fire going, listening to it rain.

I hope you have a great Saturday planned for yourself. This house needs a good cleaning so I’m on it!

  2. Yes, that first picture came with the WW recipe but yes, the Pyrex measuring cup worked perfectly!!

    I was thinking your mug cake came out of the mug in the first picture
    and you just used the Pyrex cup to mix it in.

  4. Yes! I couldn’t find a mug that seemed like it would be 2 cups. Now that I’ve made it I think I could use something smaller but if you have this Pyrex measuring cup, it worked perfectly! That little muffin just slid right outta there!

  6. Do you think a Pyrex measuring cup like you have, could that be used instead of a mug? I don’t have any large mugs or ramekins.
    I was thinking because it’s not a cylinder shape it wouldn’t bake evenly.
    The recipe does look good.

    I’m so happy you are back to blogging every day. I’ve enjoyed following you for nearly 3 years but have not been very active with any response. I’m pretty quiet that way. But it’s fun to feel like I know you and I look forward to Julie and coffee most mornings on my patio. Love seeing your meals as well
    I lost 99.5 pounds a year ago and have gained back almost 25. I’m back to healthy living again and so happy to have your daily inspiration. I have followed all your health and life challenges and you are an inspiration to say the least.

  8. Thanks Shelley. I’ve always put it all out there. I think it was one of the reasons I first started blogging in 2011. I knew I felt comfort when others shared their struggles and although I was having success at losing weight, there were ups and downs along the way.
