Mike and I went for a nice drive yesterday in the convertible. It wasn’t something we had planned for the day, but the weather was absolutely gorgeous and after two weeks of patiently waiting, we were going to get to meet Kapri, our newest grand daughter.
We kept our distance, stayed in the car, wore mask and it was strange for sure. But it was so nice to be able to see that precious little bundle in person. New born babies are soooo tiny. How do I forget that? She has long fingers and toes, lots of hair and is of course, perfect. It was great to see the family but I’m anxious for when we can all gather at our house again. Some days that feels like forever away. I think about how that might be different when it does happen.

Before meeting Kapri, I took a drive (30 min?) out to Olathe Lake. I’ve heard WW members talk about how much they love it for walking, kayaking, fishing and using the beach area, but I’ve never checked it out. I’m not sure how long the actual lake has been there, but there is a newer swim beach area with lifeguard stands and a nice big concession area, a marina and a beautiful little waterfall park that includes several instruments to play along the path. I noticed several fishing boats on the lake too! It was beautiful there and it was the perfect weather for an afternoon at the lake.
A few cool sculptures too. This looked like a big campfire hot dog stick to me! You see it, right? Well, except for the fact that I didn’t get the top of it in the picture. Think campfire hot dog stick. There, now you see it?
Of course, all of this was closed and the water features were off due to the dumb virus, but it will be a great place to take the grandkids when things get back to normal.
While walking through the water features, they have several instruments to play. Safest to play……after corona. Insert eye roll emoji here.

I got several steps in on the trails.
While practicing social distancing, I could do this and plan to soon! There were around half a dozen kayaks on the water and I was super jelly.
I always have my camp chairs in the back of my truck, so I took a little time to soak in my time at the lake and pretend like life is normal right now.
While I was playing at the lake, Mike was finishing up painting the dining room. We didn’t change the color, it just needed to be freshened up. When I came home, we did a little yard work and then I washed my truck in the driveway. When I was kid, weekend days were for housework, grocery shopping and car washing. I polished every bit of chrome too. Tunes cranked, sun shining bright and bucket of suds. AND WE MET KAPRI! It was a good day.
I ended the day with 11K in steps.
Breakfast
I made the WW 90-second Mug Muffin again. I didn’t have any bananas so I used an individual serving of unsweetened applesauce. I added fresh blueberries and made this one in a ramekin. Total cook time in my microwave was almost 3 minutes. Less time than that it seemed mushy and I for sure was wanting that muffin texture.
I topped this one with 1 T Almond Butter and a few more fresh blueberries.
Lunch
Finished off the WW Cheeseburger Soup. This never did look very pretty but it was really satisfying.
Snack
I was having some sweet cravings yesterday. When I do eat these Cliff Bars, I typically make a meal out of it, but it was the closet thing I could find for something sweet yesterday. I decided to have half of this Clifff Bar and put the other half in a baggie. Well the first half tasted so good that the second half was in the little baggies for less than a minute.
Dinner
I found something I could successfully make in the air fryer! These Trader Joe’s Mini Chicken Tacos made a great little addition to our bowl of Taco Soup!
Snack
Blueberry Mess…… Paleo Granola, Blueberries and Almond Butter with Hot Tea.
I don’t typically snack in the evening because we usually eat dinner around 7:00 and we’re thinking about bed by 9:00 or so. Last night we ate early and then had a fire going outside late into the evening. I was wanting something sweet and a cup of hot tea while curled up out there.

Oh! I used to make ice cream sandwiches all the time with fat free Cool Whip and graham crackers. I’d make them up and put them in the freezer. I had totally forgotten about those! Yours sounds delicious. Love me some halo top.

You asked for evening snacks. I have an ice cream sandwich each evening made with graham crackers and a Halo-type ice cream. I keep a bunch of them made in the freezer. Hits the spot. Sea Salt Caramel. YUM. Enjoyed the post!
