I spent most of Sunday sitting here, sipping coffee and thinking about what May might look like.
It looks like several states will be lifting the “Stay at Home” order over the next few days, many in phases. Here in Kansas, we have state, county and city dates that all differ. It’s a little hard to really know what to do. So many strong opinions out there. Many wanting to open and get the economy back up and running with many willing to support businesses while others still wanting to stay home in hopes of preventing spreading the coronavirus. I truly believe that we are all trying to do what we think is best. I’m trying to do the right thing, but I realize the “right thing” looks different to many of us. I’m doing my best to stay positive and respect all of the different points of view out there and in within our own family.
For Mike and I, May doesn’t look much different than April. Mike is working mostly from home which he does regularly anyhow. WW Workshops will continue to be Virtual through May 30.
I’ve decided to check out campgrounds and see what will be open and available in May. I think I’m taking my WW Workshops on the road with me. More info on that to come as I find out what my options are. Maybe May is an adventure?
Sunday was super chill here. I think the yard work on Saturday did me in. I relaxed all morning and into the afternoon when I decided I needed to move. I took a 3 mile walk through the neighborhood in and out of several of the cul-de-sacs chatting with several neighbors I hadn’t seen in a while.
The rest of the day, feet up relaxing. Chats and text messages with family and friends. Zoom family time with the kids before we had dinner. I really do miss our get togethers.
I made snacks for the occasion.
Mike and I ordered Mexican food and did more of absolutely nothing. It was a nice Sunday.
I stepped on the scale yesterday morning and weighed less than I have weighed in several months. After 5:00 pm, I ate like a crazy woman. It doesn’t even make sense. Does it?
Breakfast
I’m so happy to have discovered this simple recipe using oatmeal and an egg.
Yesterday with my oatmeal and egg, I added 3/4 of a banana, mashed, 1/4 C fresh blueberries, a dash of cinnamon and a few walnut pieces. I topped this with 1/4 fresh blueberries that I microwaved for 1 minute, 1 T. of Pure Maple Syrup and the remainder of my banana, sliced. Yep, it was delicious.
Lunch
Leftover grilled chicken thigh and veggies with an apple.
Snacks
We ate most of this and really had no business ordering Mexican food 30 minutes later, but we did.
Dinner
I ordered two MahiMahi Tacos with a side of fruit. They included the irresistible white cheese and chips, which we did not order and I caved. Everything tasted SOOO good, but I ate too much yesterday.
Short and simple today.

Hey Julie, I made the oatmeal muffin this morning & it was delicious. I switched back to blue so have to pay points but it’s ok. I will add blueberries & just 1 tsp of organic maple syrup. Yum. Ny
The only smartpoints on Blue would be the 1/3 C oatmeal for 3 SP! 💚💙💜

Those are roasted plantains Ronda. I love them with guacamole! I use them in soups too. Or just to snack on. You can find them several places but my favorites come from Trader Joe’s.
Hey Julie, everything (as always) looks yummy on your post. What were the little round things that almost look like dried bananas in your snack tray? Were they dried bananas?
