Rain, Yoga and a Face Mask

I’ve gone through most of my projects so these rainy days at home leave me looking for things to occupy my time.

Yesterday along with planning for my week and coaching a workshop, I cooked, sat through a storm on the deck, tried the air fryer once again and I officially give up, gave myself a pedicure, did Yoga, walked on the treadmill, cooked some more and ended the night with a face mask, then a bath.

She has such a variety. Yesterday I did a 20 minute Yoga Flow. then hopped on the treadmill for 30 minutes. If you’re a Yoga fan, check her out. If you’re a Yoga virgin, check her out. She has beginner classes too!

Breakfast

I need to switch up breakfast, but this oatmeal discovery has got me hooked, especially on a rainy morning. For the Oatmeal muffin I used 1/3 C Quick Cooking Oats, 1 egg, 1/2 C unsweetened Applesauce and a dash of cinnamon. I topped this with Warm Cinnamon Apples. 1 sliced apple, 1 T. Water and 1 tsp of cinnamon cooked in the microwave for 2 minutes.

Lunch

The only fresh veggies in the fridge yesterday were an onion and a red bell pepper. That made me think fajitas, but I had no meat or tortillas, so I did this, and I’m gonna do it again.

Dinner

I mean they look okay I guess but I give up on the air fryer. I’m not a gadget girl I guess. No luck with the Instant Pot either, but I DID TRY.

This was pretty awful, but we ate it. Nice meal if you’re a 5 year old.

Clearly, I need a project. I’ve got an idea for Effie, so I’m spending the day with her. I snack less when I visit her and she gives me a good story.

  3. I really love my air fryer! Some of my favorite things to make are roasted cauliflower and/or broccoli, straight from frozen. I spray with a bit of oil and sprinkle with lemon pepper. Also my fave way to do fresh Brussels Sprouts and roasted potatoes. I make homemade chicken tenders and cook chicken sausage links. They really plump up and are so juicy! Hope you’ll find some things you enjoy in it.

  4. I actually skimmed your post early this morning when you sent it and about fell off the sofa when your masked faces popped up! Felt good to laugh so early in the day! Ordered the applesauce and quick oats so I can make your oatmeal muffin bowls. Can’t wait. Love the possibility of the cinnamon apples. Every Sunday I make a crockpot full of them to last the week. A great addition to just about everything. But I like your quick version too!

  7. You now have me hooked on your oatmeal muffin bowl! I made the banana version this morning – sooo good! I’m going to try the applesauce version tomorrow. I needed a new breakfast option and this fits the bill🤗.
