Grateful for this Space

Good morning!

After two rainy mornings spent in Effie (so grateful to have her!!) it looks like it is going to be a beautiful sunny Saturday here in KC. I’m looking forward to spending some time outside today. I have a few things to do with Effie this afternoon, so I’ll be visiting her again and chatting with my pops for a bit.

I’ve been assigned to buy and paint the trim that goes along the base of the floor in the living room, so I’ll spend a better part of my day in the garage or driveway soaking up some fresh air while I paint.

What are your plans for this fall Saturday? Pumpkin patch? Sipping cider? An outdoor fire? A long walk? Watching some football? Curling up with a good book?

Yesterday’s eats…….

Breakfast

Typically I mix all these ingredients and pop this in the microwave for 3 minutes, but without a microwave in Effie, I made little silver dollar oatmeal cakes and cooked these in my mini electric skillet. It was kinda like having freshly baked oatmeal cookies…..stacked.

Oatmeal Cake

  • 1/3 Gluten Free Oatmeal (these do NOT need to be quick cooking oats or gluten free)
  • 1 egg
  • 1/2 C pure pumpkin (sub 1 smashed banana or unsweetened applesauce)
  • 1 tsp pumpkin pie spice (sub cinnamon)
  • 10 drop of liquid flavored Stevia. I like Vanilla, Cinnamon and Pumpkin (or sweetener of your choice)

Mix all ingredients and microwave for 3 minutes. Top as desired.

Or…..cook these in your camper on your mini electric skillet!

Lunch/Snack

These Chomps Sticks make a great portable snack to keep in your car/purse/desk

Happy Hour

I took a bunch of raw veggies along with some hummus and guac to snack on. I ate more from the charcuterie tray than I had planned.

I’m trying a new thing with the beverages. Boulevard is a KC brewing company and they have a non-alcoholic IPA that taste great, so I went with that for my Happy Hour beverage.

Dinner

Unpictured Frozen Pizza, Bag Salad and a little candy corn and peanuts!

Who hates this candy corn/peanut combo? Who loves this combo?

We’ve spent the last two evenings with our friends (they are the best!) as we let the stain on the floors dry and allow for some of the stink to fade.

While I get used to blogging daily, I need to get back into the habit of taking a picture of all of my meals. I’ll get there!

  1. That oatmeal thing. I was laughing so hard as I was reading this. I was trying to make a recipe card for it in that post and 1) I couldn’t remember how to do that. 2) I couldn’t think of a name for it anyway. I think I call them my oatmeal thingy.🤣🤣🤣🤣🤣🤣🤣🤣🤣

  2. You take the best foodie pictures! They make my mouth water, girl! Okay, you have to NAME these oatmeal breakfast treats … they aren’t baked so you can’t call ’em Baked Oatmeal. They aren’t really mug cakes, but kinda sorta? (I love that you and Effie them like little skillet cookies! YUM.) Anyway, I’ve been making them constantly – with pumpkin or applesauce or smushed banana … sometimes I make a more generous serving for dinner and dress it up a little with a generous squirt of FF RediWhip. Such a treat! In my head I call them Julie’s Oatmeal Thingies but that’s not terribly creative. Any ideas???

  6. Good morning! Love seeing your meal ideas again! Just finished having my bowl of oatmeal topped with homemade pumpkin butter, sweetened by dates instead of sugar. Added in more dates and chopped almonds. It was delicious!
