This is what that lucky husband of mine gets to look at if he happens to still be home when I wake up! (Wait…maybe this is why he leaves so early. That thought just popped into my head!) It felt great to be back at the Food Truck yesterday! We had a beautiful day and served up lots of yumminess to regulars and several new customers too! (I stole this picture from a friend’s Snapchat!) I took this one of the girls…. Okay, lots to do today. I’m going to visit my kiddo tomorrow in Dallas for a long weekend and I’ve got some food to shop for and cook up for the hubs and some laundry to do for me! Here are yesterday’s eats…. Breakfast – 7 SP Egg White Omelet stuffed with crispy White Sweet Potatoes (137g) and topped with Smashed Avocado (34g) and Salsa. Berries and Black […]

From Boredom to a Full Day!
(Revised. I forgot to include my Happy Hour in my food for the day!) Making this a quick post today. No time for proofreading. We are opening up the Food Truck today and I’m ready to see all of our customers! We haven’t worked at the Food Truck since December, and these last few months have been filled with some cabin fever days. I’ve enjoyed doing my thing, but I do like a schedule, so I’m excited for the warmer weather so we can get back to serving up some yummy food to people! Yesterday was crazy busy. My back feels much better, and it felt good to be out and about. Seems as though the ice and ibuprofen did the trick. Not 100%, but real close! I went to help the boss do food prep for today, then had about an hour to get a few errands done and […]
Ice On, Ice Off
Yesterday was an ice on, ice off, and ibuprofen day. I set the timer, and every 20 minutes, I was putting ice on or taking ice off of my back. I was reminded how I fell down the stairs a few months back, and all I got was a big bruise on my butt and a cracked cell phone. I pull down my pants to pee, and I throw out my back. What the heck. Yesterday at about 5:00 pm, I got brave (and antsy) and went to Walmart for Banana’s and Eggs. I walked very slowly and used the cart as a walker. About every 10 steps, I winced. This morning, it feels better. I mean I did roll over to my stomach, then put my feet on the floor, then push up, in order to get out of bed, but it was easier than it was yesterday morning. […]
Sunday FunDay??
Sunday FunDay? Yeah, not so much. I was really looking forward to spending the day with the hubs. The weather was gorgeous outside and we had a project to do. Well, he had a project to do, and I was going to keep him company and watch, but help just a little. Mike has been in the middle of a home office remodel for months now, with a plan in mind to start working from home…..one day. The office has new carpet and a new wall color. All of the furniture has been setting in our garage for…..well, for a really long time. Weeks. Months. Okay, less than a year. Anywho, yesterday we carried the furniture in to his office so Mike could open up the garage doors and do some painting on the pieces that he wanted to change up a bit. These two upper cabinets will set on the counter top […]
This Little Girl…
Saturday after Yoga and breakfast, I headed out to one of our grandson’s basketball games. While at the game, his sister asked me if she could come to my house after the game. Just the question alone warms my heart. This little girl wants to spend the afternoon with Gigi. I say yes, and after we all go out to lunch, (where she tells me I’m her best friend….today)…. ….her and I head to my house. Papa Mike goes back to the office to get caught up from being gone for a week. I wish I could have recorded the entire day because she just said so many things that I never want to forget. I felt like I was talking to an adult most of the day. This little girl. She is polite, she is sincere, she is funny, she is witty, she is sweet. First of all, it’s […]
Okay, Much Better
Things went so much better yesterday. Thanks for your comments, emails and text. What a nice group of readers (and friends)! I know that me being “real” is why a lot of you like to read the blog and why so many of you relate to the blog, and I can’t imagine writing it any other way. Every once in a while, I have a real crap food day, likely the result of a real crap day, as I’m sure many of you do too. But, it was just a day, and it’s over, and yesterday was much better! Yesterday was the first day that I have planned and tracked successfully in a few weeks, and it felt really good to be in control. I rarely eat breakfast before my WW meeting, and that remained true yesterday. I was up 5 pounds yesterday at my weigh in, which I expected […]
What Happened?
Before we went on vacation, I found myself tracking less and less, while still eating whole foods. Part of me was being lazy I suppose by not measuring and weighing my food and knowing exactly how many points I was eating. Part of me convinced myself that I was “safe” in the point department because I was eating whole foods. I was eating meats and veggies, fruits and nuts and eggs. That has pretty much been my diet since October, and I feel really good. I feel strong, I feel rested and I feel healthy. My last few WW meetings, I haven’t looked at my weight. Two reasons. One: I’ve started looking at the scale less and less because I am one of those people that can really let that number on the scale determine my mood, and I don’t want that to happen. Two: I didn’t want to go […]
Vacation Hangover?
This guy and I came home Sunday evening from a relaxing seven days in Mexico with four other couples. We spent an entire week playing, eating, drinking, relaxing….playing, eating, drinking, relaxing, and more eating and drinking, with a little more eating and drinking. You guys, we ate and drank a lot. The last three days have been S L O W moving for me. A couple of my girlfriends told me that I was experiencing Vacation Hangover. I think it’s an Urban Dictionary thing, but seriously, Mike and I have both had headaches since we came home. We truly did drink and eat whatever we wanted, and came home bloated and puffy, but rested and relaxed. After three days of being back to eating whole foods, we may be experiencing some sugar withdrawals, or….we just both have a cold. Either way, we’re calling it a Vacation Hangover. Besides, saying it makes me giggle. […]
Taking a Break
The hubs is taking a few days off of work, so I”m taking a short break from the blog and looking forward to spending some time together with him. I’ll be back to blogging again soon though. Here’s what went on yesterday in my Weight Watcher world. After my Weight Watcher meeting, I did a little grocery shopping, then ran a few errands. I was starving while I was at the grocery store since I skip breakfast on Friday’s, and I found all of these awesome roasted veggies along with a yummy kale salad on the salad bar. Yummmmm. Lunch was delish. We don’t always do the best job of remembering to not eat meat during Lent on Friday’s, but the first Friday, we usually do a pretty good job. I roasted up some Spaghetti Squash on Thursday, and had plenty left over, so I decided to make Shrimp Scampi and […]
Fingers and Toes
My heels are an inherited disaster, as are my toenails.Yesterday, I decided to get a manicure and a pedicure, something I rarely do. I get restless during a manicure, and I’m a big wuss when it comes to a pedicure. I’ve never really liked it. I wince and whine through pretty much the whole thing. The clipping, the digging, the filing, the hot towel, all of it. Wuss I say. I like the massage part, and that’s about it. During the massage part, I told her I’d pay extra for an another 5 minutes of massaging. She did it too! So I like that part. Well, and the end result always looks and feels nice. I’m glad I went. I even got a little heart. Lea did my toes while Maria did my hands. I’m going back in two weeks. Check out the potato I used for part of my breakfast yesterday morning! […]
