This is what that lucky husband of mine gets to look at if he happens to still be home when I wake up! (Wait…maybe this is why he leaves so early. That thought just popped into my head!)
It felt great to be back at the Food Truck yesterday! We had a beautiful day and served up lots of yumminess to regulars and several new customers too!

Okay, lots to do today. I’m going to visit my kiddo tomorrow in Dallas for a long weekend and I’ve got some food to shop for and cook up for the hubs and some laundry to do for me!
Here are yesterday’s eats….
Breakfast – 7 SP
Egg White Omelet stuffed with crispy White Sweet Potatoes (137g) and topped with Smashed Avocado (34g) and Salsa. Berries and Black Coffee.
I microwave a potato until I can just slide a fork into it, then I slice off what I want and weigh it. Then I toss it in the skillet with cooking spray to get it crispy. Then I set it aside, and add it to my omelet when my eggs are ready for it.
Snack – 6 SP

I’m guessing here, but I had a few bites of the yummy Pulled Pork at the Food Truck. I missed that stuff! I also had one bite of Chicken Salad and one bite of Mac and Cheese. The three of us missed everything, so we all had to have a sample taste!
Lunch – 7 SP
Tuna Salad, Bell Peppers and Plantains. I packed my lunch and ate this at the food truck along with my bites of Food Truck yumminess.
Snack – 2 SP

Baked Chicken Fingers with Honey Mustard Dipping Sauce, Roasted Cauliflower and Roasted Butternut Squash.

The Honey Mustard Dipping Sauce was
5 T. Honey
2 T. Dijon Mustard
1 T. Apple Cider Vinegar
I used Olive Oil to roast my Butternut Squash and my Cauliflower, so I added 3 SmartPoints to my dinner total for the Oil.
This meal is really lacking in color, but I promise that what it lacked in color, it made up for in taste!
