But First
Before I talk about food, let me just tell you that while running my ONE mile on Monday morning, I thought, well…maybe I should run two today. Then I thought….No, just enjoy the goal that you have already set for yourself and be proud of it. (My goal is to run ONE mile everyday this month.) Then I thought, well…I could see if this Pokey Ass of mine could turn my 12 Minute Mile into a 10 Minute Mile, so that’s what I am aiming for by the end of the month! Yesterday morning, I finished my mile in just over 11 minutes! That’s progress!
Okay….Food.
When Mike and I went to brunch on Sunday, one of the items on the menu was Coddled Eggs over Mashed Potatoes. It’s a soft cooked egg over mashed potatoes, and you are to mix it all up, and then dip toast in it! I almost ordered it, but what I chose sounded like a bit of a healthier option. I used to not be such a big egg fan, but I guess our taste buds do continue to change through the years, because now I LOVE eggs, even with a soft creamy yolk! Coddled eggs are somewhat similar to poached eggs, from what I understand, and I have made a type of Sweet Potato Hash and served it with a soft cooked egg over it and I really liked it, so the idea of a soft egg over mashed potatoes sounded delish! So that’s exactly what I made myself for breakfast, using a mashed sweet potato and believe me, no toast was necessary!
For a snack yesterday, I pulled my last piece of Nut Bread out of the freezer and toasted myself up a piece. In the past, I have eaten this with Peanut Butter and honey on it, but on the website, I remembered she had a picture of it with a more savory topping, so I topped it with a smear of Goat Cheese. On the very last bite, I wondered how it would taste with a little honey drizzle added to the top of the Goat Cheese. Oh my….It’s a good thing that was my last piece!
A Fun Find!
A friend of mine recently bought this veggie peeler, Veggetti! As Seen On TV!
She was sending me pictures of these yummy creations that she was coming up with and I knew that I had to have it too! While at Walmart, I saw it on the produce isle and snatched it up! I bought a bunch of veggies and came home and got started playing in the kitchen.
I knew I was making spaghetti for dinner, and I had planned on eating spaghetti squash instead of whole wheat pasta, so I decided to try zucchini noodles and carrot noodles (which I actually made with a potato peeler) along with the spaghetti squash! Such a yummy LOW point dinner! Pretty too!
