Asian Grilled Chicken Salad

Another benefit of walking with friends…..Meal Ideas! 

As I walked my 6 miles yesterday, I was already pondering dinner, and just couldn’t come up with anything. My friend, Becky, mentioned an Asian Chicken Salad that she likes to make. Mike orders that a LOT when we go out to eat. I never do. I never know the points value of the dressing, so I shy away from it. Making my own sounded like the perfect way to satisfy Mike’s love of an Asian Salad, and my curiosity of the points value!

This was last nights dinner!

Becky found the recipe on Pinterest, but I can’t seem to find the exact one. There are SO MANY!! I want to give credit where credit is due, so I apologize for not being able to find the original owner!

I’ll give you the dressing recipe as Becky gave it to me. Thanks Becky!! 🙂

It made just over 1 Cup of dressing, and I calculated it to be 2 PointsPlus for 1 Tablespoon of dressing.

I used Jiffy Natural Peanut Butter for my Peanut Butter option.

Mike was really into telling me about his day, when right smack in the middle of dinner, he said….”Hon, this is really good! What are we eating?”

Score!!!

Asian Grilled Chicken Salad

Asian Grilled Chicken Salad – 10 Weight Watcher PointsPlus

Dressing, as per the recipe

Ingredients

1/4 C Rice Vinegar

1/2 tsp Powdered Ginger

2 T. Soy Sauce

1 T. Honey

3 T. Sesame Oil

1/4 C Vegetable Oil

3 T. Creamy Peanut Butter

2 T. Sesame Seeds, Toasted

Directions

Combine all together and whisk.

Salad – this is what I used, but feel free to mix it up!

Ingredients

(4) Grilled Chicken Breast, Sliced thin

6 C. Baby Spinach (or greens of your choice)

1 Small Bag of Broccoli Slaw

1/2 Red Onion, thinly sliced

1 Small Cucumber, thinly sliced

1/2 Pound Sugar Snap Peas

1 T. Sesame Seeds, Toasted

Directions

Mix all veggies together in a large bowl, top with Sesame Seeds. For each individual serving, I took out the amount of veggies that I wanted and put them in a bowl that had a lid, then I topped it with 4 oz. of sliced Grilled Chicken and 3 T. of Dressing. I then put the lid on my salad and shook the ever living daylights out of it!! That way, I got a good taste of the dressing in each bite!

One Serving = 10 PPV

Dinner was a hit!

The Walking Challenge Continues……

It’s been a great past week of walks, but these legs need a break today! I missed Yoga last week, and I love the Tuesday class at New Day Yoga, so I’ll be doing Yoga today!

Here is what I walked yesterday!

The painter started on our house yesterday! I’m looking forward to changing the color on the house! We bought a new front door and a new back door that were both in pretty bad shape after 15 years of use and weather. It’s going to feel good to freshen up the outside of the house a bit!

I’m still s l o w l y working on the master bedroom. My hope is to have it done by the end of the month!!

Since Tucker is doing so well in the crate, I had the carpets cleaned yesterday! Hopefully they don’t get any accidents on them for quite a while, or EVER would be good too!

I picked up the dog beds that are in our bedroom and I stacked them up on our bed for the cleaning.  After I got out of the shower last night, this is what I found. He didn’t even share a bed with Mishka! I think he thought if he held down both of the dog beds, that he might not have to sleep in his crate! WRONG!!
