Saturday was a really good day that included some really good food!
It started off as a really good day because I didn’t crawl out of bed until about 8:30, and I found myself on the couch until about 11:00. The dogs and I were curled up with a blanket and I was sipping on my frothy coffee, playing sudoku and watching Will and Grace. It was a happy place that I didn’t want to leave. My plan had been to mow the lawn around 9ish, and then get my walk in early. Unfortunately, my butt was stuck to the couch and I didn’t seem to mind much.
I only unstuck my butt from the couch because I had lunch plans with my mom to celebrate her birthday!
When I got home from our lunch, I did get the lawn mowed and I got my walking miles in for the day!
It was a chill night at home, back on the couch, watching a really good movie! We watched “Belle” and it was based on a true story. I’m a sucker for a movie based on a true story, so I was hoping it was gonna be a good one, and it was! If you’re looking for a movie, I highly recommend it!
Here’s all the good stuff that I ate yesterday! It must have been the right balance of foods, because I wasn’t hungry in between meals so I didn’t have a snack.

Salmon and Kale Salad
with Walnuts and Lemon Vinaigrette Dressing
We stopped at a little place we’d never been to before and we were both really glad that we did. It was called the Tavern in the Village. Mom ordered the Creme Brûlée French Toast and I had the Salmon and Kale Salad. I didn’t eat the bread that came with it. This salad was awesome! I think it was the dressing that did it for me!

Cheesy Quinoa Veggie Bowl For One

Ingredients
1/2 C Cooked Quinoa
1/2 C Marinara Sauce
1 zucchini, chopped
1/2 red onion, chopped
2 tso Olive Oil
3 wedges Fresco Queso Laughing Cow Cheese (Creamy Swiss Light flavor would be good also)
Salt & Pepper
Directions
Sautee onion and zucchini in olive oil. Stir in cooked quinoa and marinara sauce. Add cheese wedges and stir until the cheese melts. Salt and Pepper as desired.
How easy is THAT??
I made Mike a skillet with eggs and sausage and cheese, and he kept taking bites off of my plate!
If you’ve never put a wedge of laughing cow cheese in with a little quinoa, you’re missing out! It really is yummy! Think Mac and Cheese.

i saw your comment on the Kale and salmon salad at the Tavern and was wondering it you are in the Birmingham, AL area. I was just wondering if it was the same Tavern. This was in September 2014.
