I found myself sitting at the Tire Store yesterday afternoon, getting new tires put on Mike’s car. Unexpected expenses are a real bummer! After finding out that I would be there for about an hour and half, maybe two hours, I sent out this group text to a few friends, and I got a response!
So, Niki saved me from sitting in those rock hard chairs and listening to CNN, and I spent the rest of the afternoon grabbing a Starbucks and running a few errands with her.
Bonus……Niki sent me home with a big bag of broccoli since she had an abundance of it! Dinner!
It’s another beautiful day here in KC, so I’m opening up the windows and bringing in the fresh air!

I have a microwave Tupperware Egg Poacher that might be 25 years old and it makes a perfect poached egg every time! Maybe one day I’ll try to actually poach an egg on the stove top, but probably not.
I could eat breakfast food for every meal. I love eggs, breakfast meats, oatmeal, cereal, fruit…….
I’ve really only been eating eggs and oatmeal lately, but there’s just so many ways you can eat both of those foods!
Yesterday’s breakfast was one of my favorite ways to eat eggs!
I could live in a World where only breakfast food was allowed.

Chicken Broccoli Rice Casserole

I now had a big bag of broccoli and some leftover Rotisserie Chicken, so I was cleaning out the fridge and browsing through the pantry for dinner ideas. This casserole has Broccoli, leftover Rotisserie Chicken, the last 3 slices of Canadian Bacon, the last of the shredded cheddar cheese, the last of the skim milk, a Package of Uncle Ben’s Brown Rice, Cream of Mushroom Soup, and a little chicken broth (because I didn’t have much milk and it needed more liquid). I topped it with a few Panko Bread crumbs and dinner was pretty darned tasty!
