Yesterday was the truly relaxing day that I thought that Monday was going to be. My mom was coming out for coffee, and I had no plans to leave the house, except to go to Jazzercise in the afternoon. I spent the morning wrapping a few packages and just kind of chillin and enjoying my Christmas Tree. Since my mom was coming out, I wanted to make something to eat that I knew that she would really like. She likes sweets with her coffee. and I wanted to make something that we both could have.
The last two Tuesday’s, I made these yummy little tortilla’s so Mike and I could eat taco’s. We both loved them! They are made with Coconut Milk, and Coconut Flour, and to me, they have just a tiny tad bit of a sweet taste to them. They are also thin, and remind me a little of a crepe. I realize that eating a taco shell that reminds me of a crepe sounds weird, but you would just have to make them for yourself to see how delicious and versatile they can be. I decided to see if these tortilla’s could play the role of a crepe, and they did!
I filled them with Blueberries and Pears. I dusted Mom’s with a little powdered sugar. The Pear Crepe was Mom’s favorite. I liked them both.
My brother moved to Florida in May and will not be able to come home for Christmas. He is my only sibling, and he and my mom are very close. Mom’s feeling a little bummed about him not being able to come home, and also worried about him being alone this year. She was feeling the Christmas Blues a couple of weeks ago and had decided that she wasn’t going to decorate her apartment this year. She lives in a very small one bedroom apartment (that is super cute!) and hadn’t planned on having anyone over during the Christmas Season. I convinced her to decorate because I really thought that it would help her mood. I personally like to decorate my house for Christmas for myself. Sure, it’s nice to have others over to see it, and our kids and grandkids end up here at some point, but I really decorate my house for the month of December so I can enjoy it.
Mom decided to decorate and I helped her several days ago. I am so happy that she decided to, and so is she. She said it really did help to put her in the Christmas Spirit. She has even decided to host a small (maybe 8 of us?) Chili Supper and Game night on Christmas, which is perfect, because all of our other plans are on Christmas Eve.
Before my mom left my house yesterday, I took her over to the tree and picked up a few of the packages that were under the tree.
We don’t really exchange gifts anymore, but I printed off a 5×7 picture of Mike and I and our kids and grandkids that we took on Thanksgiving, and bought a frame for it. I wrapped that up, and then bought a few other really simple things and wrapped them. Except for the photo, I put gift tags on the other gifts that said “To Kay, From Santa”. I told her to go home and put her gifts under the tree.
I really want her to have a nice Christmas morning. I don’t like the idea of her waking up alone and thinking about my brother waking up alone, then feeling sad, so I wanted her to have something to feel cheery about. I think its going to work. Merry Christmas, Mom.
Okay, yesterday’s eats were kinda weird. I liked the crepe thing that I made, so after my mom left, I had another one. They are 7 Smartpoints each! For lunch, I had yet another one, but I added some scrambled egg whites to my plate. I didn’t get in a lot of protein or veggies yesterday.
The weather was great, so I took my mutts out for a short walk, then I went to Jazzercise. I had a great day, and I hope that you did too!

Breakfast – 14 SP
Crepe’s (Paleo Tortilla) filled with Blueberries and Pears. For the Blueberries, I simply heated frozen blueberries in the microwave. They make a great juice. I’m still trying to eat 90% Paleo, so I didn’t add any sweetener. For the pear, I chopped up a pear, added 1 T. of water and 1/4 tsp of cinnamon and put that all in a baggie. It’s the same way I make the Warm Cinnamon Apples, (except no sweetener or vanilla) but with a pear. I mixed it all really well, vented the bag about 1 inch, then microwaved that on a plate for about 2 minutes.
I divided the tortilla in half, and filled each half with different fillings. I liked it so much, I ate two. It wasn’t super filling (seriously you guys, no pun intended), just super tasting.

I still have some soup left from the weekend. I made Turkey and Vegetable Soup , but I made it with Chicken and white carrots. The carrots kind of trick your eye into thinking your getting a bite of potato! I actually made this with white sweet potatoes, so there are a few potatoes in there too. I topped my soup with steamed broccoli. The broccoli soaked up the soup broth and really tasted yummy.
