Super Excited!

This year, for some reason, about every three days or so, another string of lights goes out on the tree. I just keep adding new strands of lights without taking any ornaments off! That’s no easy task!! Last night, more lights out. Egads. It’s starting to look a little ridiculous if you get real close. Un-Decorating is going to take forever this year!

I’ll add more lights to my tree today, because I want it to be perfect for tonight! Guess who’s coming home tonight? Yep! My kiddo! Tess and her boyfriend, Manuel, are coming in on the late late fight tonight, and I am so excited. They will be here until the late late flight on Sunday night, so we get to spend all sorts of time together!

I’ll blog tomorrow morning before anyone wakes up, then enjoy Christmas with my family. I hope you all have a wonder Christmas and Holiday!

Let the food challenges begin. I have some cookies in the house now for the grandkids on Christmas Eve, and after overthinking them being here, I finally ate a Lara Bar yesterday instead of any of the cookies. That’s a success for sure, but that little tiny bar is now 8 Points on the new plan! It’s all fruit and nuts, so for me, that was a much better choice than 8 SmartPoints of cookie’s. It did the trick, I stopped thinking about the cookies. (Well, until now. Crap.)

I’ve been in a hash slump, so I tried to add in some variety yesterday. No complaints about the hash, it was just time to change things up a bit.

Since I no longer eat cheese or croutons or bottled salad dressing on salads, I haven’t been eating salad very much. I think I eat more salad in the spring and summer anyhow. After finding the Fall Salad that we’ve been eating and really enjoying, and discovering how much I like flavored vinegars and oils as salad dressings, I’ve been trying to come up with ideas to eat as salad toppers. At Costco the other day, they had beets in a container that were all chopped up and ready to go! I bought some knowing that I would roast them and see how they tasted on top of a salad!

I mixed them with a little Butter insured Olive Oil and Sea Salt. I roasted them at 400 for about 20 minutes. Yum!

They tasted much better by themselves than I was expecting them to! After a late yoga class, I ate some beets with green beans, and it was a yummy little snack! No worries. I have plenty left to top a salad with today.

Here are yesterday’s eats…..

Breakfast – 6 SP

Egg cooked in an avocado slice (this is really really yummy, if you like eggs and avocado’s, which I really really do) Sweet potatoes and red onions on the side, and a few berries.

Snack – 3 SP

Beets, Green Beans with Bacon. I made the beets and the green beans after I had already had my turkey burger. Mike didn’t like my beets. Shocker! He likes everything! That’s okay. More for me to top my salad with today!

FYI. There is a gadget at Ace Hardware that zaps the bad string of lights and they start working again! You just take one bulb out and put this gadget in the socket and pull the trigger. Don’t know how or why it works but it does……most of the time! ! I think they are around $15.
