(Revised. I forgot to include my Happy Hour in my food for the day!)
Making this a quick post today. No time for proofreading. We are opening up the Food Truck today and I’m ready to see all of our customers!
We haven’t worked at the Food Truck since December, and these last few months have been filled with some cabin fever days. I’ve enjoyed doing my thing, but I do like a schedule, so I’m excited for the warmer weather so we can get back to serving up some yummy food to people!
Yesterday was crazy busy. My back feels much better, and it felt good to be out and about. Seems as though the ice and ibuprofen did the trick. Not 100%, but real close!
I went to help the boss do food prep for today, then had about an hour to get a few errands done and change clothes, then headed to a very short Happy Hour to say Happy Birthday to a friend (I was actually only there one hour! Who knew I could make Happy Hour really only last an hour?), then I went to pick up this little angel from daycare. I’m making crazy eyes so she will smile. 🙂
It’s rare that I get to spend two days in one week with any of the grandkids. Guess it was my lucky week!
She played with my Barbie House from the 70’s while I cooked up a skillet of Taco Meat. How cute is this?? I loved watching her play with my toys. I am so glad my parents kept some of the things that they kept!

Here are yesterday’s eats…
Breakfast – 5 SP
One Egg, Three Egg Whites, topped with Avocado and Salsa. Berries and Banana Slices on the side
Lunch – 9 SP
Un-Pictured Tuna Salad with a few Plantains. I took my lunch with me, but forgot to snap a pic!
Snack – 0 SP
Grapes on the run!
Happy Hour – 9 SP
I had a small glass of wine and a few bites of flatbread and cheese.
Dinner – 8 SP
Taco Tuesday! I made a huge skillet of Taco Meat. One pound Turkey. One pound Beef. After the meat was cooked, I bulked it up with some veggies and added in one bag of broccoli slaw, about a cup of shredded carrots and one diced yellow bell pepper.
You could eat this all sorts of ways. Fill a shell or tortilla of your choice? Put it in a bowl and top it with shredded lettuce, greek yogurt, sour cream, cheese, avocado, salsa…..or our favorite, a runny egg! It’s also yummy with some added diced cooked sweet potato!
I was busy feeding Char, and waiting on Mike to get home before I ate dinner. I kept sneaking bites of it out of the pan, and decided I was full by the time Mike got home. He ate his with a runny egg on top. So darned good!

I feel like we eat Taco Meat a lot! The points depend on what meat I use, and I like to switch that up for some reason. Sometimes ground turkey, sometimes ground beef, sometimes one pound of each, which is what I made in this post.
If I am only using one pound of 93% Lean Ground Turkey, then I add my veggies and let them soak up the taco flavor. Then I take a spatula and divide the meat in the pan into half, then divide those again in half so that there are four servings in the skillet. Then I just scoop out one serving. One serving (if I make it only using the 93% Lean Ground Turkey) is only 3 SmartPoints.
Lately, if I make a big skillet, like I did in this post, I use one pound 93% Lean Ground Turkey, and one pound 90% Lean Ground Beef. I use a spatula and divide what is in the skillet into 8 servings after it is cooked, as best as I can, I count that as 5 SmartPoints.
If I make it with one pound of 90% Lean Ground Beef, then I count 1/4 of the cooked taco meat and veggies as 6 SmartPoints.
In this particular post, I was eating out of the pan while doing other stuff! Big WW NO NO! I just took my best guess, and probably guessed over on points, but better safe than sorry.
Okay, I’ve really babbled here, but I hope that I’ve answered your question and helped you figure out how to enjoy a big delicious bowl of Taco meat and veggies!!

I didn’t have a sister, but my next door neighbor and I played Barbies for hours and I’m still a Barbie fan. I cracked up when I read the Mary Tyler Moore part. I so get that! Fan of hers too. Ahhh….memories.

Memory lane!!! I had that EXACT same Barbie house! Recognized it immediately !!! But it makes sense as we are pretty close in age…. With me being the more “experienced”. Ha! My mom didn’t keep mine however – I think the only thing kept was my Legos – which I loved to build houses with – Thanks for the memory trip!
I still have that same Barbie house in my attic somewhere! ☺️ Love that my parents held on to some old beloved toys. No grandchildren as of yet, but maybe someday and I’ll be ready.
I had a Barbie house exactly like yours! My sister and I played and played with it. Unfortunately, we don’t have it anymore. It always kind of made me think of Mary Tyler Moore’s apartment, which I loved, too.
