I woke up wanting to feel thirty something, so I chose my t-shirt wisely. Maybe I’m three. I don’t know. Mickey just makes me feel young. I say, “Whatever works, do that”.
Tucker and I headed to the park. Just saying “I’m going to the park”, makes me feel young.
The weather made it a great park morning.
This Bat House is on the walking trail. Why on earth would I disturb the bats?? I actually picked up my pace as I walked by the bat house.
After the park, I decided to make dinner early and have it ready for later. I was playing with a Shepherds Pie. I do not have a recipe, and I’m fairly certain that I make it different every time.
Sauté Celery, Carrots, Onions and Garlic in Olive Oil, add salt and pepper, then add Beef or Turkey and cook through. Next, add Tomato Paste and Broth of your choice and simmer. Top with Mashed Potatoes, Mashed Sweet Potatoes, or Whipped Cauliflower and stick under the broiler for a few minutes. That’s it. That’s the recipe.
Yesterday, for whatever reason, I decided to do some with Whipped Cauliflower and some with Mashed Sweet Potatoes.
My Cauliflower wasn’t as smooth as I like it. I’m not sure what I did different. It was almost gritty? I decided that it had the exact texture of grits, and wouldn’t grits taste great on a shepherds pie? So I added some cooked bacon and stirred in a wedge of Laughing Cow Cheese and now I had Cheesy Grits, in cauliflower form.
Dinner was tasty and unexpected!
Bonus….we have leftovers!
After cooking dinner, my ingrown toe nail was killing me and I wanted to soak my feet. TMI? I’m sorry guys.
There wasn’t time for a tub soak before going to work, so I put a Tupperware container in the shower and soaked my foot while I showered. No joke. I say “Whatever works, do that”. It slid around in the shower nicely.
After working and a full day on my aching feet, (9,873 steps) I went to Target and I bought these items in hopes of moving this plantar fasciitis thing along. It is driving me nutzo! I bought epsom salt, KT tape and a that boot apparatus for sleeping.
When I got home, I soaked my feet for about 15-20 minutes in the Epsom salt, then I wrapped it with that KT tape. I found a YouTube video that told me EXACTLY how to wrap my foot with KT tape when experiencing Plantar Fasciitis. Fascinating stuff out there! Then I put on the boot/brace.
Kendra, THANK YOU for suggestion I go buy this tape. Night one was a success. I hope that it continues.
To end my day, I watched Dancing With The Stars and the theme for the night was……Disney! Perfect ending to a day where I did all that I could to feel younger.
Before all of that Mickey Mouse stuff, (am I the only one laughing here?) I made some awesome pancakes!
I used the Big Ass Waffle recipe, but made a stack of cakes instead of a waffle. I made Warm Cinnamon Apples for zero smartpoints to top them off with. I added just a tad of the cooked apples to each pancake as I cooked them.
My breakfast was pretty dang delicious.
Breakfast – 6 SP
Big Ass Waffle recipe (3 SP), but in pancake form, topped with Warm Cinnamon Apples and 1 T. Pure Maple Syrup (3 SP).
Lunch – 15 SP
Random things from the fridge.
Rotisserie Chicken, Roasted Butternut Squash, Carrots, Plantains and Egg Salad.
My Smartpoints are higher for lunch than is what is on this plate. After this plate, I dipped a few more plantains in my egg salad.
Dinner – 7 SP
Shepherds Pie, modified. 🙂
Snack – 6 SP
Two of these Coconut Date Balls. I find these in the produce isle. I put these in the freezer and they taste great with a cup of hot tea.
The only ingredients are Coconut and Dates, so they are high in SmartPoints, but oh so tasty!

Great idea for soaking your foot!!!!!
I use KT tape on my plantars fasciitis when it starts to kick in!!!! I’ve also used it on a few other issues. :-). Love KT tape!!!
I take a plastic shoe box and soak my right foot while I do the dishes.
(My left leg is in a vascular bandage called an unaboot-it’s cloth so I can’t take a shower.)
