Cinco de Mayo 2020

Let’s just say it wasn’t your typical Cinco de Mayo. It was a quiet day and a quiet evening. I enjoy spending time alone and I can find several things to do to entertain myself, but I’m starting to miss my social gatherings, especially so when there is something to celebrate.

We have some friends that often host Cinco de Mayo and I would have loved nothing more than to spend the evening on their patio last night with friends enjoying some authentic mexican food and a Margarita. Instead, Mike and I enjoyed a our own little Fiesta on the deck and fantasized about going to a party.

Earlier in the day, my niece met me over at Effie and we had coffee together while practicing social distancing. She has a cute little truck with a camper shell on the back and she may love Effie almost as much as I do. She gets me.

It is nice to have that space over at dads house to be able to do that.

Dinner

I made up a small buffet for Mike and I. I wanted a taco and mock Chipotle Bowl.

Turkey Taco Meat with homemade Taco Seasoning, Black Beans, Corn, Lettuce, Tomato, Cheese, Roasted Plantains, Guac, Salsa and Sparkling Water with a Lime to finish it off.

Activity

Some days I’m getting in long walks and other days I have so much going on that I get in my 10K steps without taking a walk. My goal is to stay active and not lead a sedentary lifestyle. Just a girl trying to take good care of myself and age as gracefully as possible.

Thank you for all of the airfryer tips! I think because it is a mini one, I’m discovering it’s not the best way for me to prepare a dinner for Mike and I. I will put to use all of your advice and keep you posted!

I’m keeping up with the water. The easiest way for me to do this is to drink 16 oz before my first cup of coffee, then I’ll alternate a cup of coffee, a cup of water.

Do you have any tricks for making sure you drink plenty of water each day?

  3. Well phoey! I don’t think you mentioned your air fryer was a mini until now. Yeah–they require quite some air for the frying to work.
    2 chicken tenders at a time? I’m not sure how mini a mini is….but hey–now they know what to get you for mother’s day-a 7qt one!!

  4. Just thinking about your air fryer situation. I happen to love mine someone gave it to me and it’s a really big one however did you know you can buy a different lid to go on your Insta pot and turn that into an air fryer. Runs about $75 takes a little to no room and gives you a big air fryer space to cooking. Hope that helps!
