Blueberry Oatmeal

I’ve been spending a lot of time in the kitchen lately playing with simple ingredients. I really like my Peanut Butter Banana Oatmeal and my Oatmeal with Warm Cinnamon Apples for breakfast, but I hadn’t thought to play with the blueberries before. 

This Blueberry Oatmeal really turned out yummy.

Blueberry Oatmeal

Ingredients
  1. 1 Cup Frozen Blueberries
  2. 1/2 C Gluten Free Quick Cooking Oats (or any quick cooking oats)
  3. 1 packet Sweetener of your choice
  4. 1/2 tsp Cinnamon
  5. 3/4 C. Boiling Water
Instructions
  1. Cook frozen blueberries in the microwave in a microwave safe dish for 1-2 minutes.
  2. Add warm blueberries to all of the ingredients in a bowl.
  3. Stir well and let sit for 2 minutes.
  4. Enjoy

  1. The frozen blueberries thawed in the microwave made this so good! I’m sure fresh blueberries would be great too, but then you wouldn’t get all of the yummy blueberry juice!!

  3. So thanks to you I have a fun treat! One teaspoon Speculoos Cookie Butter on a banana! I’m over the moon for this treat! Perfect after my Butternut Squash Chili with Avocado and chicken and no chips for lunch! Feeling a little like SWF (remember the movie Single White Female)!! Loving the food ideas!
