I love a bowl of spaghetti on a cold night. Wait, I love a bowl of spaghetti on any night, or any day, and I wouldn’t say no to a bowl of spaghetti for breakfast. Oh dang, Eggs on spaghetti? Maybe!

It’s one of those comfort meals that I’ve learned to enjoy with less calories, more vegetables, but still taste great and it is so easy to make.

Serves 4

One Serving = 4 SmartPoints

Ingredients

1 lb. Ground Turkey, 93% Lean

1 onion, diced

2 garlic gloves, minced

Sea Salt and Black Pepper, to taste

15 oz can diced tomatoes

15 oz can tomato sauce

Optional: Oregano, Basil, Thyme to taste

Directions

Cook turkey, onions and garlic until turkey is no longer pink and cooked through. Do not drain. Season cooked turkey with salt,  pepper and additional seasonings if desired, to taste. Add tomatoes and simmer for about 15 minutes.

Are tomatoes in season? Make your own Marinara in place of canned tomatoes!

I will likely never buy a jar of spaghetti sauce again……

Serve over Spaghetti Squash and top with 1 T. Parmesan Cheese. Add an additional SmartPoint for the Parmesan Cheese.

Here I served it over Spaghetti Squash and Shaved Zucchini Noodles

You could also serve it over Spiraled Zucchini Noodles with Spaghetti Squash and top with Parmesan.

Would you believe this taste great over Fresh Green Beans cooked with bacon? It is soooo good.

Don’t like to mix your noodles? So many options.
