5 Week Challenge…Day 7

We finally got a little sunshine yesterday. I’m not complaining. I planted just enough flowers a couple of weeks ago that I’m certain had it not been for the rain the last several days, they wouldn’t look so pretty!

It was nice to walk with a little blue sky above me though. I’m right on track with my Walking Challenge! One week down and 25 miles down, four weeks and 100 miles to go!

Breakfast – 3 PPV

Blueberry Pancakes, Black Coffee. I truly love how easy and yummy these are.

Black Bean Quinoa Taco’s for Taco Tuesday!

After eating my Egg White, Quinoa and Black Bean Bowl for dinner the other night, I wondered why I didn’t think to add a little taco seasoning to it. I made this for lunch yesterday and loved it! This filling would be great in a bowl by itself topped with the avocado and salsa, but I was hungry for some corn tortilla’s!

Zucchini, Red Onion, Sweet Potato

I cook my sweet potato in the microwave and then peel it, weigh it and dice it. While the potato is cooking, I sauté the zucchini and red onion in 1 tsp of Olive Oil. When those become soft, I add the diced sweet potato. I stir those three together for about 1 minute and season with sea salt and cracked black pepper.

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um…this is a work in progress)
I will go no more than two days in a row without exercise.
I will track every single day for the entire year. No matter what.
I will RUN in a minimum of six 5K’s. Two down, four to go!
