Are you walking with me? Did you make it to 50 miles in your 100 Mile Walking Challenge? It was rainy and blah here all day long yesterday, and I did a lot of activity on Sunday, so yesterday, I took a break, so I’m a mile short, but it’s all good.

I’ve never done a drawing on the blog, so I’m doing my first one “Old School”. For each time you comment, I write down your name on a pink slip of paper, and put it in this jar. How Old School is that?? Guys, I’m a little blog. Tee Hee.
I was in a cooking mood most of the day yesterday. Dreary weather puts me in the mood to cook and eat. I finally had to leave the house so I didn’t just sit around and eat all day. Guess where I went? The grocery store. More specifically, Trader Joe’s. They had just experienced a power outage so they were temporarily closed! The horror! So I went to Hobby Lobby and browsed. No food there. Well, actually they have candy at the check out, and I looked at it for just a split second!
I finally made it back home, and I thought about food some more. I decided to use my fresh herbs from my herb garden that I got for Mother’s Day.
Breakfast was yummy. I was going to finish it off with some fresh cilantro, then I forgot! I cooked a few thinly sliced sweet potato slices in Avocado Oil, then seasoned them with Sea Salt and Pepper until they were tender. I placed those in an omelet pan making a layer of sweet potatoes. I topped those with Taco Meat, then I poured 4 Egg Whites over them and covered them. At the end, I flipped it just like an omelet so that the egg whites would finish cooking and the sweet potatoes wouldn’t burn on the bottom. See?
That was a close call.
This was yummy and eventually I will do a recipe post on a sweet potato crust for something. Love me some Sweet Potatoes. Maybe next time, I will remember that I have fresh cilantro? Egads.
When I came home from Hobby Lobby, I was back in the kitchen. I baked some Spaghetti Squash. I had cooked my Turkey Spaghetti Sauce in the morning. While the squash was cooking, I decided that Baked Sweet Potatoes sounded good, so I looked up a few recipes and found one that I could use some of my fresh herbs with and it sounded yummy with spaghetti. Then I had these huge Portabella Mushrooms that needed to be used, so I brushed those with Olive Oil and baked them for just a few minutes. Then I filled them with all sorts of yumminess and put them back in the oven for a sec. I wanted to top those with fresh basil, and then forgot. Seriously?? Dinner was unexpectedly delicious.
Mike came home late, only to discover that I had already had my dinner, and I ate half of his portabella mushroom. Oops.
Here are yesterday’s eats….
Breakfast – 8 SP
Sweet Potato Taco Meat Egg Thingy…..topped with Smashed Avocado and tomatoes, and no cilantro.
Lunch – ??SP
Un-Pictued handful of Almonds and dried Cherries, Banana, Clementine, Blueberries and lots of coffee. It was dreary here yesterday and for some reason that kind of weather makes me want to cook and eat.
Dinner – 12 SP
Turkey Spaghetti over Spaghetti Squash, Hasselback Garlic and Butter Sweet Potatoes and a baked Portabella Mushroom filled with Tomatoes mixed with Olive Oil, S&P and garlic, then topped with Goat Cheese.
Mikes Plate….You guys, that mushroom tasted so good, I really did eat half of Mike’s before he got home from work, but I did remember to put the fresh basil on his. So fresh!

I think it can be really tough to stay on a schedule while traveling whether we are talking food choices or exercise. Pack those shoes and get out there as much as you can! You’re doing awesome!
You are doing great Erin! Maybe I need a fitbit for those days that I think I haven’t been super active. Maybe I’d be surprised!

I’m at 54 miles but traveling next week so not sure how that will go.
I’m keeping moving to stay with the challenge!! I have 95 miles so far. (per fitbit, anyway) So I think I’m going to challenge myself to go 200 miles.
Chili and Caulirice sounds delish right now in this crappy cold and rainy weather. I need to try that!

I could (and feel like I do) eat sweet potatoes at every meal too! Who knew as a kid, only eating them at Thanksgiving, I would crave a sweet potato for breakfast???
You are doing a great job with the walking. Maybe you’ll finish up early??? Ya just never know.
I’m going to have to try that breakfast. I could eat sweet potatoes at every meal! At the halfway point on the 15th I’ve logged 52 miles. It’s a good thing that I’m working extra hard now with a road trip coming up at the end of the month. That will hinder my mileage I’m sure. Keep up the good work!
Ive never made the spaghetti squash but I like the turkey chili over cauliflower rice. It makes my meal a lot more filling for zero points – similar to the spaghetti squash.
