One Down, Two to Go!

I hope you all enjoyed your Cinco De Mayo. I did!

 

I had a plan for yesterday and I succeeded! Having a successful day yesterday sets my mind up for success in getting through today and tomorrow successfully as well!

I knew that I wanted to have my beers, so my day was planned around low point and balanced meals that would allow points at the end of the day to enjoy beers with friends without the worry of over doing.

I planned out my day and I stuck to my plan. I did not allow myself to think about the things that I would not be eating, but I kept focused on what I could have because I had planned for it. It worked and I had a fun day working the food truck for First Friday’s downtown and a fun night with friends in the neighborhood.

I’ll keep this post short because it is a gorgeous Saturday morning and after I post this blog (while sipping coffee on the deck), I’m headed out for a nice sunny walk.

Breakfast – 3 SP

Egg White Omelet with Sweet Potatoes and Bacon

 

I had cooked bacon in the freezer and cooked sweet potatoes in the fridge. I sautéed a little onion, tossed in potatoes (43 g) and bacon (1 slice) then I poured 5 Egg Whites over the top and let it cook. I flipped it. It fell apart and it was ugly. I ate it. It tasted great. lol

 

Lunch – 5 SP

Tuna Salad with an Apple

We worked from 10-4 at the food truck and that’s a long time to be in the truck and not eat. I packed a lunch and it worked out perfect!

I drained two small cans (4 ounces each) of Tuna packed in water, (8 ounces total) (2 SP)

I mixed in 1 T. Avocado Oil Mayo (3 SP), Mustard and Dill Relish (0 SP) and added a sliced apple (0 SP)

43 grams of protein to keep me satisfied throughout the afternoon.

 

Dinner – 2 SP

Leftover Chicken and Veggies.

  3. I did not have “beefy” meals, did I? lol. I did try to keep them high in protein. I admit it was not the most balanced day, but it was my most successful day of that challenging weekend. That was a tough one!!!

  6. Oh, my…4 beers, I’m envious! I quit drinking about 6 months ago for health reasons but I sure do miss having a couple pops every now and then. Beer was my alcohol of choice. You sure didn’t have very “beefy” meals but I’m sure you enjoyed the brews. Good for you. Plan you work and work you plan!
