It was a full and happy day yesterday and now I’m off to lead a couple of WW Meetings.

Add a few ice cubes and a pretty piece of fruit.

Egg Roll in a Bowl

This was REALLY good! Hopefully I get to the leftovers before Mike finds them. I have made a similar recipe using 99% Lean Ground Turkey and we both really liked it, but since I’d had hardly anything to eat yesterday I made this with ground pork and savored the extra flavor.

No regrets!
