Such a productive day!

I totally forgot to check my steps last night before going to bed, but after looking at it this morning, I only missed my goal of 10,000 by a few. I’ll take it.

 

Here are yesterday’s eats.

It was a colorful Food Day!

Breakfast – 10 SP

My leftovers from the night before topped with Eggs and Avocado along with a few grapes.

 

Lunch – 3 SP

Tuna Salad, Baby Carrots and Cucumber slices.

 

Dinner – 6 SP

Trina’s Lasagna Recipe

I’ve had some issues with bloating after this last surgery. In an effort to find the culprit, I’ve decided to eliminate a few things from my diet to see if I can figure out what is making that happen. One of the things that I am eliminating for a while is dairy, so I’m trying to be creative in the kitchen.

This recipe uses  Zucchini for the noodles and Spinach mixed with Cashew Cheese for the filling.

 

Have you ever tried Cashew Cheese?

Soak cashews over night, drain, then mix with Almond Milk and a few seasonings. I know it sounds really strange, but it’s surprisingly delicious.

 

Lot’s of veggies in this Lasagna.

I subbed the Italian Sausage and Beef in the original recipe with 2 lbs of Ground Turkey. 

I used one lb of 99% Lean Turkey and one lb of 93% Lean Turkey.

I divided this into 8 servings. Each serving was huge at only 6 Smartpoints a serving and this was delicious!!
