Diced, Chopped and Thinly Sliced

It was an extremely relaxing Sunday. I woke up feeling rested but I still planned to take it easy. We ate a yummy late breakfast.

My mom came out later for coffee.

I meal planned for the week, then I grocery shopped.

I was in bed by 9:00 last night.

I’m ready for a full week.

Yesterday’s eats.

I love a chopped salad. Reason being, you get a taste of everything in every bite. I do that with a lot of my meals. Chop and dice into small pieces, slice things up thin. Topping your Oatmeal with a Banana? Slice it really thin and get a taste of Banana in every bite! Avocado? You can get a taste of Avocado in every bite of your meal if you slice it really thin! Chop up your Beef Taco Meat as small as you can, you can add less to that Taco Salad and have fewer SmartPoints while still feeling satisfied with taco meat in every bite!

I love this Apple Fennel Pork Sausage recipe! I haven’t made it in a while, and I’m trying to add some variety into our meals for the week. I chopped it until I could chop no more for some tasty omelets this week.

The recipe makes 8 patties, but I like to toss all of the ingredients in the skillet and make sausage crumbles instead. That way I can add just a small amount to an any meall for less points. It is also less points because I do not use the recommended oil for cooking the patties in. There’s plenty of fat in the sausage so it’s just not needed.

 

Since most packages are not exactly a pound, and I am on a Tracking/Counting mission right now, I wanted to know how many points I was going to be having throughout the week in this sausage.

I think this package of sausage was almost 1.25 lb. I weighed the cooked sausage, then divided that into 8 servings. 

 

This was a serving size. Perfect for filling up my omelette! Now I can take out 2 ounces for 4 Smartpoints, or maybe even 1 ounce for only 2 Smartpoints.

 

Dinner was simple last night and my planned meal was going to take too long to cook, so I saved that recipe for tonight.

I sautéed a few veggies in Olive Oil, diced a baked White Sweet Potato and added that to the skillet, then added in some of our breakfast sausage. Mike raved about dinner. So simple!! 

Splitting it into servings makes breakfast today a cinch! I’ll top this with an egg. Obviously, we are okay with eating the same few things a few meals in a row.

 

Breakfast – 6 SP

Egg White Omelette filled with Apple Fennel Pork Sausage (4SP) topped with Avocado Slices (42g – 2 SP) and a side of fruit.

 

I ended up smashing those thin slices of Avocado up and this was SOOOOO good.

 

Lunch – 3 SP

Tuna Salad (made with 1 T. Primal Kitchen Mayo, 1 t. Mustard, 1 Hard Boiled Egg, 1 T. Dill Relish, Chopped Celery, S&P and Everything But the Bagel Seasoning from Trader Joe’s)  on a bed of greens, Apple Slices and Cucumber Slices sprinkled with Sea Salt.

 

Dinner – 8 SP

Veggies, White Sweet Potato and Pork Sausage

 

Dessert – 1 SP

Dinner was followed with Banana slices topped with 1 tsp Mixed Nut Butter from Trader Joe’s while chilling on the couch.

  2. I am so far behind reading your posts. I am so happy to know that all is well with your daughtel! I am so glad to hear your are doing better and getting back into the swing of things. You have such a great attitude. Attitude is everything to get us through the tough times as you well know.

    Sorry I didn’t answer your email, l time just gets away from me. I still have a lot of things to deal with since my husband died. We see my sons surgeon on Friday and we are very excited to hear what he says. Hoping he will be able to drive in June.
