What’s Your Style?

My Friday so far has been relaxed with a leisurely morning at home, followed by attending my WW meeting. It’s cloudy and 68 so I’m in sweats with a bottomless cup of coffee in my hand and I could not be happier!

My routine is all over the place these last several weeks. Well, I guess I don’t actually have a routine, but I’d like one. Until I do have one, I’m just trying to get in a blog post when I can and hopefully share something useful, or at least say “hi”.

I’m tracking, drinking tons of water, walking and cooking. My weight is stuck, I have Kankles and swollen hands and the hot flashes are intense (I will admit, they are less frequent when I drink less coffee!) and the doc has me experimenting with my meds to work through the puffiness and these aching joints. All side effects of the current Estrogen Blocker I am on. Fingers crossed we figure this out soon. 

Despite my puffiness and my shedding of layers during a hot flash (If I’m not having a hot flash, I’m likely freezing.) I think I’m in a great mood! Others may disagree.

Ha!

 

I’ve got a few yummy recipes that I have been making lately that I have tweaked just a bit to make them lower in SmartPoints, and I thought I’d share.

I love this  Chicken and Broccoli Stir Fry Recipe over at PaleoNewbie.com. The sauce is delish!! I didn’t have any chicken, but I had a bag of frozen shrimp in the fridge, so I decided to see how her sauce would taste with shrimp. We loved it!

This meal was 6 SmartPoints per serving (recipe makes 4 servings) when making the following substitutions…..

I did not use Water chestnuts or Almonds or Arrowroot as noted in her original recipe.

My points for this meal include 2 T. of Olive Oil used for cooking the shrimp.

Served over Caulirice. So easy. So good. It’s all about the sauce!

 

I’ve made this Egg Roll in a Bowl recipe several times replacing the ground pork with 99% lean ground Turkey. I wasn’t expecting it to have much flavor using the ground turkey, but it did!

This meal is 4 SmartPoints per serving when making the following substitutions……

Replace the pork with 99% Lean Ground Turkey and leave out the Sesame Oil in steps 1. and 2.

Cook the veggies listed in Step 2 and the Ground Turkey in the skillet at the same time, then add the cabbage to that. 

 

Again. So easy. So good. This sauce is simply Hot Sauce and Mayo combined. Yummmmmm

 

I was wanting something sweet the other night so I came up with this little Zero SmartPoints treat. (Add points for the coconut.)

Makes Two Servings – Zero SmartPoints

1 Frozen Banana

1 Frozen Mango (You can buy frozen Mango Chunks at Trader Joe’s and I’m sure other places as well.)

1 T. fresh Pineapple Juice

Mix in blender or food processor until it looks like THIS! Top with coconut if you desire, but add the points!

 

Nut Butter

You all probably have gathered that I love my Nut Butters. This one is a favorite. I have Mike hooked on it too. I made this snack plate for us one afternoon.

1 tsp Nut Butter = 1 SmartPoint

2 tsp Nut Butter = 2 SmartPoints

1 T Nut Butter = 3 SmartPoints.

I’m pretty content with a 1 tsp Drizzle……

 

Look what I got for FREE! I was puzzled by the RXBar delivery because I didn’t remember ordering any recently??

To my surprise, they sent me some new flavors, along with three new Nut Butters, on the house!

This Kids PB&J Bar is awesome!!

 

The Vanilla Almond Butter is maybe the best thing I’ve tasted in a really long time! Thank you RXBar!

Developing a positive body image has been difficult for me. Learning to appreciate the things that my body can do for me has helped me with my own body image and has increased my self confidence. Appreciating my body for what it can do has allowed me the courage to try new things.

You are beautiful and worthy today, no matter where you may be in your journey.  Appreciate all of the things your body can do for you! Step outside your box. Challenge yourself. Be ADVENTUROUS!
