Long Summer Days

I am loving how early the sun rises and how late it sets. It allows more daylight for that outside walk either early in the morning or later after dinner when it’s cooler outside.

I feel like these longer days allow me to accomplish all that I want to accomplish while also getting in a little “do absolutely nothing” time. There’s just something to be said about more daylight. When I roll over and see the light sky before I really want to get up, I get up anyway and come out to the deck. It’s so peaceful and cool that early in the morning. Good thinking time, and let’s be real, there’s a lot to think about right now.

I’m having all sorts of trouble loading pics to the blog these last two days so I’m behind. Today, no time for story telling, just my salad craze this week and a few other yummy things we’ve been eating for the last few days.

I made Grilled Flank Steak to use this week in a couple of different Salads.

I topped this fairly traditional Steak Salad with Ranch Dressing. There are some hardboiled eggs under all that meat and cheese.

I loved the Tzatziki sauce in the WW Kebab recipe a few weeks back. I wanted a Mediterranean Salad with steak and the flank steak combined with that sauce tasted great over mixed greens, kalamata olives, cucumbers, tomatoes and feta.

I grilled my first pineapple! Basted with Honey, Rice wine vinegar and fresh Thyme. Next time I do this I’m going to give Gina’s recipe a try over at Skinny Taste.

Do you grill fruit? I’ve just discovered all sorts of recipes in the WW App that I MUST try!

We chatted about saturated fats and unsaturated fats this week in the Workshop and lots of members were talking about Avocado, which I love. This Avocado Toast topped with Everything But the Bagel seasoning hit the spot one day this week for a mid morning snack.

I’m playing with my protein powders. I have a chocolate and a vanilla. This is the vanilla with 8 oz unsweetened almond milk and a handful of frozen blueberries. So refreshing after a long hot walk! Thick enough to eat with a spoon!

We’ve got a busy weekend here and I’ve got tons to do today to prepare. Two of our kids and their kids are coming over Saturday for a backyard BBQ and crafts. We’re making homemade Father’s Day cards.

Mikes parents are coming over Sunday morning for Father’s Day coffee out on the deck.

My dad and stepmom are coming over Sunday night for dinner out on the patio. I’m making them the Skinnytaste Spinach Lasagna Rolls that I made for Mike on our Anniversary.

I’ve got lots of groceries to buy today!

  1. Yum! It all looks so good! The flank steak looks to die for, Julie. And grilled pineapple … is there anything better?! I’ve always done skewers with big tidbits but I love how you sliced yours. Sounds like a busy weekend ahead for you, so I’ll let you go. Enjoy all your festivities!
