Feeling a Little Sassy

My walk outside yesterday was gorgeous!

That beautiful blue sky? You can’t come home from this walk and not be in a good mood. Ya just can’t. Like….it’s not possible.

Fallen leaves and still this thick rich green grass.

Along with my “3 Mile Brisk Walk” as the trainer calls it, there is a warm up that includes a few ab exercises and some stretching, followed with a cool down with stretches. Seriously after my walk outside I was feeling all kinds of energy, confidence, spunk and a little sass.

Then I was like…..What’s on my shirt? Oh, just a dusty filthy mirror.

So, before Thanksgiving, give the house an overall deep cleaning, paint the fireplace, paint the dining room and figure out how to seat 30+. No problem.

Yesterday was a crazy busy productive day and still, the fireplace never got touched! I really want to make that happen before Thanksgiving since we are hosting. Eeeeekkk. Feeling pressure and I don’t work well under pressure. Today is full as well and I’m not sure if it will happen today either. It may be one of those midnight projects in the coming days.

The piano man (he moves them and tunes them) had to cancel last week but plans to be here tomorrow. I hope so because as of right now, hosting Thanksgiving for 30+ pilgrims could be difficult with the house in it’s current condition.

The table is pushed up against the counter top and there is no place else to store the area rug for now, so were basically just tripping over it. It’s fun.

Did I mention I want to paint the dining room before Thanksgiving? It’s really not a ton of wall space, but there is a lot of cutting in to do.

Food

I still have a couple of these gorgeous little delicata squash left to make.

Have you tried them yet? I’ve found them at Trader Joe’s, Whole Foods and the farmers market although I would imagine they are in other grocery stores as well. I first tried them three or four years ago? I am hooked! I’ve only roasted them, but they have a potato texture I think. Soft, but not mushy. They could be made sweet or savory but I’ve only had the sweet version. Tasty side dish with grilled or rotisserie chicken, but I really love to have this with my breakfast.

Breakfast

One egg, sautéed spinach in a little EVOO with the last of the roasted delicata squash.

Snack

One of my new zero point foods on the new WW Personal Points is avocado. And because God put it in it’s only little carrying package, (much like a banana, another favorite) I feel like He intended one avocado to be a serving, so I smashed it up, added some sea salt and ate it with a few chips and bell pepper strips.

All kidding aside, this was a very small avocado. WW has taught me about balance, portion control, healthy habits, behaviors like mindful eating and being informed. I will not eat one whole avocado everyday simply because it is a zero point food for me, but I did yesterday and it was delish.

Dinner

I put together a little snack tray to take to our friends house to watch the Chiefs WIN!!

I found this easy little sandwich hack idea this summer looking for camping food ideas. The nine top buns are all still connected. Take them off, add all of your toppings. No need to be precise, just kind of throw it all on there! Then top with the buns and slice into nine little sammies.

Mine…Italian dressing, roast beef, turkey, salami, tomato, lettuce, cheddar, muenster, s&p and mayo.

My gift to myself yesterday?

Seeing this sunset when I walked out of Target. So I just sat in the parking lot for a bit and admired it.

The sky said yesterday, “I’ll just be beautiful all day long and hope you have time to admire me”

The only commitment I’m going to make for the day is to be awesome!

If that awesomeness includes painting a fireplace, so be it!

  1. When I was in grade school and junior high, I collected posters of sunrises and sunsets. They were all over my bedroom walls. I wish I had a picture of that bedroom.

  2. Taking a moment in the Target parking lot to enjoy the sunset? That is certainly a gift to you! Good for you! Don’t you always feel like pretty sunsets or sunrises are God’s way of saying, “Yep, I’m still here and I’ve got you covered!” I love your daily reminders to gift ourselves at least one thing every day. Good advice! Now don’t stress over Thanksgiving (says the friend who’s hosting exactly 6 that day!) Just map out your strategy, cook what you can ahead of time, and … well, actually, you manage WAY better than I ever will, so I won’t prattle on. Avocados! That was one thing everyone was thrilled about at our Saturday WW meeting. So fun observing how the light bulbs are going off in everyone’s heads as they realize all the new options and possibilities they have. Have a great week!
